I think chicken might work. You might not need to cook it quite as long - Maybe keep the pieces on the larger side to keep them from falling apart or drying out.

I think lamb or pork would work too.

DEFINATELY make the tagine!! I made it for my boyfriend and his 10 and 13-yr old girls. We devoured it, even them! They didn't think they liked the squash, but at the end, the only thing left was a couple mushroom (I added them since I had fresh ones) and a little broth. (I made rice and told my boyfriend to take it as his lunch the next day. He took a salad, threw some nuts on and had a fabulous meal.)

It was sooo good!

I asked for a subscription for my b-day this month, so just in case, I bought the March issue to insure I got it. I've already planned 3 meals for this weekend. I'll let you know how they come out.

Oh, I'm jealous... and since today's a holiday with no mail service, there's no chance of me getting my issue today. :-P
I'll have to check out the Artichoke & Goat Cheese Strata recipe when my issue finally arrives.

... I am thinking about trying the "Beef Tagine with Butternut Squash" from the Jan/Feb issue for dinner tonight. I'm off from work today & I feel like it's an opportunity to try something new.
I'll post the results sometime this week.

I just got it today, and my Everyday Food, too. I thought I was having a vegetarian guest tonight, so I ran out and made the Artichoke and Goat Cheese Strata on page 180, then she ended up not showing up anyway. It's pretty good though! There will be a lot left over since I know my family won't touch it. I wonder if I can freeze half, or just try to eat it up over the next few days. Heck, I'd even eat it for breakfast. I might try it with feta next time.

Agreed! I was at the airport yesterday, and I saw the March issue on a news stand.... but I would much prefer to see it in my mailbox.

I love Cooking Light too. There are so many good recipes to try - I'm almost never dissappointed with the results.

I so didn't realize we had a cooking light team on spark people. I guess i haven't looked for new teams since i started (many years ago) - so i'm super excited!
I love cooking light, i scour their magazines and web pages, i have so many "to try" lists under my login on their site, i just don't know when i'll find the time!

Can't wait to hang with my other spark peeps that love cooking light!
