I'm gluten free too!
I have been for a couple of years, but I just started this diet in November...and just like you, my symptoms have gotten better with this higher fat diet...l have more energy and can think clearer...way better than with the diets the doctors recommend.
I just got good news too...because I have a thyroid condition I always get blood work done every few months...they not only check my thyroid levels but all the other metabolic panels as well...I was curious to see how I would do after eating this way for a few months...the results were amazing!
I have never had any problems with my cholesterol or sugar ever, I am anemic, Vitamin D deficient and B-12 deficient....
The blood work showed my cholesterol was as my doctors stated "by the book" HDL/LDL levels were low (would have preferred HDL levels higher, but they were still good); triglicerides were very low! My sugar was low as well...all this was normal for me but made me happy because the dr. didn't want me to go on Keto stating it was unhealthy...
But the best surprises were that I am no longer ANEMIC or VITAMIN D deficient!! All that protein helped my anemia and the butter, cheeses, heavy whipping cream, and fish oil helped me raise my vitamin D levels naturally! (the doctor forgot to check b12).
All this is due to the Keto diet I have been following...and yes I've been losing inches more than pounds (but I'm heavy into weightlifting so that could be the reason)...but I'm still reaping all these healthy results...
