Lyndsay, I have recently become addicted to roasting my veggies! It is so easy and delicious! By roasting them with just a spray of good oil (I use grapeseed), there is virtually no fat and the veggies get a nice brown/crisp to them! I always add smashed garlic and fresh lemon juice for flavor. If it is more of a texture thing, try a smoothie! When you add fruit, you cannot even taste the greens in them! Or a pureed soup?! Also, you could find a good quality green powder to add to water so you can get your daily requirements.
