I have a craving for Crockpot Buffalo Chicken Lasagna. Here is Stephanie O'Dea's (the Crockpot Lady's) recipe:

I want to make some with zucchini instead of noodles.

I'm also craving Crockpot Hawaiian Lasagna. I like pepperoni added to mine. I use ham (and pepperoni), pineapple tidbits, green pepper, onion, and pizza sauce.

But today at the Soup Kitchen they were giving away smoked turkey pieces. So tonight I'm making smoked turkey and fresh collards in the crockpot.

Cooked a whole chicken in the crock pot yesterday, removed the meat from the bones had enough for 3 adults for dinner then saved the rest of the meat for chicken salad for lunch.

I put the bones back in to cook overnight. I strained the liquid this morning and it's now in the fridge. I will skim off the fat and save the gel that is left. This gel is wonderful for many things: like: arthritis, beautiful hair and nails and your immune system. Really soothes a sore throat and helps a person recover from the flu. I freeze mine in an ice cube tray then transfer to freezer bags. I warm it up, choosing how many ice cubes I want and try to drink it every day.

Made Crockpot Buffalo Chicken today.


Put 4-5 boneless, skinless chicken breast in CP. Cook on high for 3 hours. Drain juices from CP. Mix 12 oz Frank's RedHot Wings Buffalo Sauce & pke of Ranch Seasoning Mix. Pour over chicken in CP & cook another 30 minutes.

Serve as is or shred & serve on buns.

Put several slices of pork loin (bought on sale & sliced by my meat market where I shop) in the CP.

Poured 2 cans of Golden Mushroom Soup over this & cooked on high for about 4 hours. Served over mashed potatoes. Wonderful!!

Tonight it is pork loin chops in crock pot with one can of GOLDEN mushroom soup and one can of water. It is great served with pasta or mashed potatoes because the gravy is AWESOME and the pork chops are so tender you can cut them with just your fork.

So the Sparkpeople Slow Cooker Whole Chicken recipe was AMAZING. The whole family loved it. I read the comments before making it and they recommending putting potatotes and veggies on the bottom and the chicken on the top so it would raise it up and the chicken would not fall apart as easily. It worked. I put potatoes, carrots and onions on the bottom of the pot and the chicken on top. I think this may become a once a month recipe in my house. emoticon

I put in a packaged of boneless chicken breast, two cans of diced tomatoes, oregano, basil, garlic powder, some diced onion and fresh diced red pepper. I will shread the chicken when I get home put back in the pot with the sauce and serve over pasta with green beans on the side. So good!

I have Italian Caramelized Chicken in the CP today -- chicken breast tenders with zesty Italian seasoning mix and brown sugar. I'll probably broil it a little when it's done to truly caramelize the toppings. The pic looks really good, can't wait to get home and try it!

Today I use mine to cook some stew. I had started preparing it before thee KSU basketball game and rushed to much. i had done everything except plug it in and start cooking. I didn't realize what had happened until three hours later. it was a good thing I had plenty of leftovers on hand because my mom came over for dinner!

I used my crockpot to make homemade chicken and rice soup. I cooked the chicken, broth, peas, carrots, onions, celery, basil, pepper, garlic salt then an hour before being done I added one and a half cups of rice. It turned out great. I have been eatting it for lunch for a few days now. Because of trying to stay aways for frozen lunches I am trying to make soups in the crock pot and taking them to lunch each day. So far so good. Next week is ham and potato soup and also split pea. I am trying to stay away from preprocessed foods so I think the crock pot will help alot with that.

I will be using the crock pot Friday since I have choir rehearsal. I will cook tonight while I sleep and when my DH comes home after work tomorrow dinner will be ready. Now what is going in the crock? Turkey Cutlets, seasoned with a combination of spices of my own creation, a little bit of Chardonny some onions, and while I am working out and getting ready for work I will add cubed sweet potatoes, and cabbage. Let it cook for an hour and it will ready before I leave the house in the morning.

Today I have boneless, skinless chicken thighs with a jar of salsa. Yesterday I did a pepper steak of sorts, sliced steak, red & green peppers & an envelope of Lipton onion soup mix with 1c water. It wasn't too bad!

Today I am making a new pinto bean recipe in the CP called "Hot As Hell Hickory Beans", but I did not add "all" of the jalapeo peppers that it called for in the recipe. Will give review tomorrow.

Today I put several pieces of chicken tenders, some sliced bell pepper, 3 T. picante sauce and 1 can of Fiesta Nacho Soup in the CP and cooked for 6 hours on low. Served it over rice. DH loved it!

Last time I made this, I had Pepper Jack Soup, but Campbell's has stopped making it (so I was told).

I made turkey vegetable soup to use up leftover frozen turkey.

1-2 cups cooked turkey bits (substitute any leftover meat you may have)
1 15oz can diced tomatoes with their juice
1 32oz carton chicken broth (homemade is better, just put bones from your next whole chicken carcass in a crockpot with a splash of vinegar and seasonings, and make "free" bone broth)
1.5 cups frozen mixed veggies
1 large baking potato, peeled and chunked
2 medium onions, diced
Seasonings to taste

This morning I prepared fresh green beans with ham and potatoes into the crock pot. Hubby got home about an hour ago and called me, I'm still at work, to let me know I FORGOT TO PLUG it in. I was so set to have it for dinner when I got home. So was he. I can't believe I forgot. I guess it's 'cause I was trying to get it all ready before I fixed him breakfast.

Tonight I am soaking beans in my crockpot (not plugged in). Tomorrow I will drain, rinse, and cook in the crockpot. I am batchcooking them to use in several different recipes.

Today I have a pound of pinto beans. Since I'm gone for at least 10 hours, I rinse really well, then add a LOT of water. I also added a couple huge cloves of garlic and a good cup of chopped onion. They always turn out so good! Yesterday I made SP Creamy Italian Chicken slow cooker recipe and it was absolutely to die for! I put it on top of some quinoa and it was quite the hit. Will def be making that one and the salsa chicken more often.
