Welcome aboard, Rhonda. I love my crock pot but I have the same prob, I don't want to cook for one and a half. Hubby's an over the road trucker, and we have a young daughter. I didn't think of freezing portions. Have a great weekend, Heather

Hi Rhonda, welcome aboard. I live alone 90% of the time and don't cook for 1 either. I cook for many and freeze meals in portion sizes. My husband works away from home so I freeze his and my nephews. I freeze mine. I freeze some for my children just so they don't miss home cooking too much. lol One weekend I froze 135 freezer meals. A couple weeks ago I froze 185 pieces of fried chicken because my hubby and kids always ask for it. Its great because you can buy in bulk when its on sale. You can take out a meal and thaw it in the fridge and then just put it in the oven for 30 minutes or nuke it. Its great for busy nights because then you don't have a lot of clean up either. I love it. Enjoy your journey.

Hi Rhonda, Crock pot cooking can be great for one person, but the added bonus is that you can do enough for several meals and freeze portions.

Then you can make yourself dinner from the Freezer some nights, putting portions of different dishes on a plate and popping it in the microwave.

Never worry about cooking too much of something. I recently had to prepare for surgery and recovery, so I cooked & froze portions of vegetables too.

Another great idea with the crock-pot. some have timers so they will come on at a certain time of day, but others don't. If your one doesn't have a timer, use a timer on the wall socket.. like people use to have lights come on or go off when they are away !

Then you can set it to start cooking about 3.00pm ready for when you get home

A few years ago I met a lady from New Mexico. She asked me why folks in the South feel that they must attach a region to identify our state. Um, I thought everyone did that! LOL

I am from Northeast Arkansas, at the very edge of the Delta. I could almost throw a rock and hit the Ozarks. I live in the far northern part of NEA now, but I grew up south of here, in the heart of the Delta region.

My children are all grown. They all live in AR, but not near me. My father and one of my brothers lives here in the same town with me. My other brothers live in Colorado, Central Arkansas, & Washington D.C.

I used to be the best cook around, but I find it a challenge to cook for 1. I have never mastered crockpot cooking, but I would like to. It would be great to put the crock on a timer and have dinner almost done when I get home from work, which is about 35 miles from where I live. emoticon

I also look forward to makeing new FRIENDS!
