Hi, my name is Kristen, and I have been a member at SP for many years...not on recently and consider myself a newbie again...I love my crokpot and have a new recipe in there for dinner tonight! I work full time out of the home and found one of the barriers to my weight loss is picking at food while making dinner in the evenings, or snacking before and after. I know if dinner just needs to be dished up when I get home I will cut out needless calories, eat healthier and ensure my daughter has a good meal before going to dance (every night)Really looking forward to seeing what this team is all about and sharing recipes that are good, and healthy! emoticon

Carol--Thanks for your info. I'm cooking more from the crockpot and your advise on rinsing, soaking and changing the water answers my questions. I did not know the information about red beans. I'll try them instead of using the canned version.
I want more control over the pureness of what my family eats.

In Greece there are very few canned beans apart from imported baked beans and butter beans, most people cook them from scratch but not in a slow cooker. Recently I saw an advert for frozen beans and lentils, from what I could make out they still need to be cooked, they've just packaged soaked dried beans. I wonder hoe much they charge for the "convenience". emoticon

I cook chickpeas from dried all the time in the crockpot, I make homemade hummus with them. Hummus is the only way I eat garbanzo beans. They have never become dark with me, maybe it was the oregano?, they cook up just fine for me, using the plain-water-only method.

Yes, it is turning dried into canned first. Takes longer than opening a can, but very frugal, health benefits of controlling what's in the water (my water is no fluoride, and no salt, canned beans have lots of salt), and is so easy to do in the crockpot.

I'm unfamiliar with azuki. You could search online about them to find out. However if they're red, I'd err on the side of caution and boil them 10 mins first.

The truth is that when I've tried to cook soaked chickpeas (garbanzos) in the crockpot they took forever and became dark and unappetising so I gave up. All I had added was onion and oregano. I've had no trouble making pea and ham soup in the slow cooker with all ingredients together from the start, also lentil soup with its trappings, but then, peas and lentils cook quickly and I do soak them first.
Your two-step method is basically turning dry beans into canned first emoticon and then taking the recipe from there. I'll give it a go, thank you for this tip.
You may like to try the bicarb method with older beans and chick peas (garbanzos), both of which take longer to cook. Greek tavernas also add bicarb to squid (calamari) to make them tender before frying them.
I find frequent changes of soaking water help reduce flatulence.
Greeks usually boil all beans/lentils for 10', then change the cooking water, this results in a less dark dish and perhaps also to prevent the toxins you mention. I had heard about the toxins in kidney beans but did not know this applied to all red beans--would that include azuki? I made 'an' (azuki bean jam) recently using an authentic Japanese recipe so they were boiled rapidly on the stove top, but it did not involve changing the cooking water. Also for 'sekihan' (rice with azuki beans) the bean soaking water is used to colour the rice pink. I do that in the rice cooker which I imagine gets hot enough to neutralise the toxins.

All beans contain small amount of toxin, so yes you do need to soak and change the water.

I pick over, rinse, and soak overnight, drain, rinse, and cook 8 hours on low. For others reading: Day 1 = cooking; Day 2 = making the recipe with them. Adding anything acidic or salty (tomatoes, lemon, seasoning) can make them hard and they sometimes never get soft; so I do the 2-day method to prevent that, I never put anything at all in the water on cooking day.

Others do and I don't understand why theirs turn out and mine don't: so for me to prevent bean disasters it's a hard and fast rule, absolutely NOTHING but plain water during cooking.

After they are soft then I make the recipe and add stuff to them.

Since doing it that way I've never once had hard beans. No problemo.

I eat them often enough that my body has adjusted and I no longer have gas. I have never added bicarb tho I have heard of that.

Lentils and split peas I do not soak first.

For others reading: you must boil any red bean (small red, kidney, etc.) ten minutes at a full, hard boil, because of a weird toxin that can and does kill people every day. So when making red beans, boil them first on the stove top at a hard boil 10 minutes; then soak and do Day 1 and Day 2. Many crockpots do not get hot enough to cook red beans properly.

Thank you for this Fearless Life. Do you soak the legumes first? I always soak them, even lentils, in several changes of water because this reduces gassiness. In Greece they add a little bicarbonate of soda to last change of soaking water of chick peas (garbanzos) to help them become tender and cook faster. Be sure to rinse thoroughly before cooking.

Hi Everyone
I'm an Aussie living in Greece. I have an oval slow cooker which I do use occasionally, but I want to use it more often. I have just started the South Beach Diet so I'm looking for SB recipes. I cook legumes/beans/lentils once a week, usually in the pressure cooker, but I'm sure they would cook up a dream in the slow cooker so I look forward to your tips and recipes.
Recently I had just started cooking a chicken in the oven when I got a call from Husband which meant I had to leave the house in a hurry and would be gone for hours, so I had to turn off the oven. I had visions of having to throw out the part-cooked chicken due to salmonella fear, when Son suggested I put it in the slow cooker to finish off cooking. I just bunged the chook whole in the cooker with whatever else was in the baking pan, and we came home to the tenderest chicken, falling off the bone. Not bad thinking for an 8-year-old!

5 Things About Me:
1) I have two boys (ages 6 and 2) that keep me on my toes.
2) I love running and kickboxing; I'm currently training for my first half-marathon in August!
3) I have an M.Ed in Applied Kinesiology (K-12 Physical Education); however, my license has expired due to being a SAHM.

I'm Nicola and I'm from England and I'm new here!

Since I'm new:

I love my slow cooker! I find it very hard to cook because of my disabilities. I love being able to chuck everything into the slow cooker and just leave it for hours.
If I cook normally, I'm then too tired and in too much pain to eat!

Just found this group - yeah!
I joined SP in November, but am committed as of Jan.2. Tracking food and exercise has been key.
* Married; son 11, daughter 16
* Stay-at-home mom (how much longer can I get away with that?!)

I"m new to the team. I had joined SP in Sept. but just found this team yesterday. Here are 5 things about me.
1 Happily married for 28 years(our anniversary was this past Friday.

Hello, I am new to the team. I started cooking with the crock pot when I worked 10 hour shifts. Now I am disabled and even though I am home, I use my crock pot at least once a week. I am into cooking healthier meals and am looking forward to new ideas from the team.

Slow but will get there!

Hello,
I love cooking with my crock pot. My crock pot saved me more than once. I work 9-5 and to have dinner mostly ready when I get home is a God send. I am a single mom of 8 children 3 grandchildren. My hobbies include walking, cooking, reading (Im a Librarian)and crocheting...I hope to share some classic and new recipe with you all.

Hi, I'm from Tri-Cities, WA area.

I'm new to WA, as I've lived everywhere so to speak. I love to cook, and I rekindled my love for crockpotting last year as I followed Crockpot365! However, not all of Stephs recipes (as good as most of them are) are very waist friendly, and I'm here at SP partly because of that, and partly because of my own lifestyle up until January of this year.

I'm married with 12 rats, 3 guinea pigs and one 12.5 year old Red & Rust Dobie (who is pretty sick right now sadly).

emoticon I've lost just over 40lbs since starting with SP in February and much happier about how my life has turned around in losing weight and becoming fit!

Hi, I'm Tippi. I was thrilled to see this Team yesterday and joined immediately. It's just my husband and I, and we work from home. I am a writer. I work out 4x/week at the gym, and I walk there/back for 3 miles when I go. On "off" days I take one of my 3 dogs for a 2-mile walk after dinner, and sometimes after lunch. I feel way better since joining SP. I'm nearly halfway to my goal. Bye--time to leave for the gym!

I'll be married to my hubby Dave for 16 years on June 18th '09' (we were teenage sweeties..lol)

I'm 36 and he's 38. (I just had my b-day. I was born on Memorial Day)

We have a 15-yr-old son Cory.

We also have a 3-yr-old Pet daughter, ZuZu.
She's a mini American Eskimo.

I love to 'scrap book' my own recipes and those I find in mags. I have 2 full binders so far.

Hello all! I am a 30 mother of a wonderful redheaded 2 yr old and a wife of 6 yrs to a MARVELOUS husband. My husband and I recently started again on this weight loss train...again...again...again...We both have more than 100lbs+ to lose so we have been trying to do so by eating lower calories and moving around more. Our very active 2 yr old NEEDS to be outside. So we have been spending alot of time outdoors trying to landscape and cleanup our 5 acres. We will be building a house ONE DAY. With all the time outside, cooking seems to take a backseat sometimes. We don't want to eat fastfood because of the content of NON WEIGHT LOSS ingredients. It is so easy to throw it in the crock and go! So that's what we do. I would love to get new LOW CALORIE recipes and offer some of my own! THANKS for the hello!

Hi,
I'm new here and finding a lot of helpful information and fun challenges. I don't know why but I have 3 of each type of animal 3 horses, 3 cats, and 3 dogs. They keep me entertained and laughing most of the time. This winter - a very long snowy winter - I'm knitting an afghan and designing it as I go. I love to knit and have been knitting over 25 years. As soon as the snow melts away I have over 100 spring bulbs to plant, can't wait! I am an avid gardener, fisher woman, and kayaker. I live close to Coeur d Alene, ID (panhandle)and love it here.
I'm a teacher and working on my doctorate in education (it takes all my time - no time for socializing emoticon ) But at least I do have this site to come to! emoticon . I have 50 pounds to lose and need to get back in physical condition.

Hi, I'm Lou, and I'm new to this team, but have been with SP for about 18 months now. Here are 7 things about me:

1. Grew up & went to school in Illinois; lived in CA before moving to WA state.
2. Have been married to Larry for 39 years.
3. Retired after 21 years as a technical writer for an Education Service District; taught English for 7 years before that.
4. Have a tendency to attract stray cats that stick around - they're my "dump" cats. Currently have Toby, Spot, and Gibble-Gabble, and Sparky wants to join the group.
5. Love to read - action/adventure, mystery, romance, historical, pretty much any kind of fiction.
6. I grow & show roses, which led to being active with the American Rose Society.
7. This winter I am crocheting afghans, scarves, and hats to be donated to the local YWCA program for abused mothers and their children next December. Have 2 large boxes full so far.

(It started out to be 5 things, but which one could I leave out?)

Sorry for the delay but here are 5 things abut me....

1) Married 3.5 yrs. No human babies but 2 cats and and a 12 week old puppy (as bad as a toddler).

2) Currently live is St Louis MO. Grew up in Wisconsin. Have lived in Colorado and Kansas as well.

3) Enjoys crafting. Currently making and sell key chains. But, also cross stitching when I find the time.

4) Favorite TV shows include Days of Our Lives, NCIS, CSI, Law & Order SVU, Jay Leno, Biggest Loser, Wrestling, Mythbusters, Dirty Jobs, Deadliest Catch, House, Charmed reruns, and many more that I can't watch due to not getting the channels.

5) I spend way too much time in front of my computer. I can generally be found on IM, Myspace or Pogo.com!

1. We have 9 pet chinchillas. - Rico Suave, Dust Bunny, Runtster, Wheeler, Blocker, Squeaker, Baxter, Stinker, and Porkie.
2. I've worked as a soda jerk, lifeguard, maid, interior decorator, and R.N.
3. I love log homes, houseboats, the beach, science, doll houses. I hate winter, math, housework, waiting, hypocrites.
4. I like to collect things, especially cookbooks.
5. My grandfathers lived across the street from each other and both were born on Christmas Day.

1. I love to cook, paint, garden, do arts/crafts.
2. My dh and I ride bicycles together.
