How about microwave stuffed baked potatoes? Nuke the potato and then add Green Giant veggies for one.
Adopt the "cook once eat twice" mentality. Invest in a crock pot. Cook a cheap cut of beef or pork or even chicken - whatever is on sale. You can then portion the meat for tacos, stew or what ever. Freeze the portions and then pull them out as needed.
