I would have to say that of the different meals of the day - I HATE BREAKFAST. Other meals - it is so easy to pull off healthy foods, but breakfast - I struggle with.
Fortunately, my family loves to eat oatmeal - but I hate it (yes, I was raised on those wonderfully sugar-ladden packets of oatmeal and that's the only way I got past the texture. I've already tried steel-cut oats and I do like it better - but not much.
I don't mind making an egg substitute omelet from time to time - but the problem is - time. I don't go heavy on cheese - and love to make it stuffed with lots of veggies - but time is definitely an issue.
While there are healthier cereals on the market - milk just doesn't agree with me in larger quantities. Need it in coffee? No problem. In cereal? stomach just doesn't love it.
I have had hypoglycemia for most of my life - but it is completely controlled by diet. So, you won't find me wanting to eat an unbalanced breakfast. So - while everyone else enjoys things like pancakes, etc. - I just can't. Besides, syrups and all that aren't healthy anyway.
So - I would really love to be able to benefit from this group - as breakfast is such a struggle for me. Hoping to make it better.
