My name is Devin and I'm from Seattle, but I live in Glasgow, Scotland. I've been on Spark People before, but I'm recently back and I'm much more motivated to make positive life changes in order to reach my goals instead of just "wishing I could lose some weight." I don't know about you, but I've never wished away a single ounce!!!!!!
I got the Spark People Cookbook a few days ago and tonight I made my first recipe: the fish packets on page 224, for two servings. I made a couple of modifications; instead of zesting the lemon, I just cut up a whole lemon and split it between the two packets. I also added a few cooked mussels and some medium green chiles. They were PERFECT!!!!! It's just like a special restaurant meal that my husband and I had to celebrate our anniversary last month, except healthier and MUCH cheaper (I'm a real bargain shopper and had purchased the fish earlier at an extremely reduced price. The whole meal cost me about £2/$3). I was nearly in tears by the third bite, I'm not even joking! It's just so satisfying to make such amazing food that's also so healthy!
