Welcome! I may have to try that recipe but I'm relatively new to consuming fish. As a child, my mother cooked salmon patties once and the house reeked for days and there was no way I was going to eat anything that smelled that bad. lol. I've been trying a different kinds of fish here and there and have actually like some. Thanks for the recommendation.

It comes down to a simple question: what do you want out of life, and what are you willing to do to get it?

My favorite part of your post is "instead of zesting the lemon, I just cut up a whole lemon and split it between the two packets. I also added a few cooked mussels and some medium green chiles" - wow, talk about creativity that leads to something super-delicious! Wish I could have been at your house for dinner tonight! I may try that recipe, with your modifications - thx.

It sounds like your daughter was in Edinburgh. I spent NYE there on my first visit to Scotland, but wasn't in a hurry to get back the next year - too many people! But I hope she had a great time in the UK. Thanks for your kind words. Best of luck to you also!

Hi Devin,
Welcome to the team. My daughter was in Scotland for New Year's Eve. She took the train from London. She went to some block party that's supposed to be the best place in the world to spend NYE. Not sure where, but she loved it. Because of a snowstorm here in the state's the day before she was supposed to leave, her trip was delayed, so she didn't get to spend as much time there as she wanted, but she definitely wants to go back.

Maybe I'll make it there someday. Good luck with your weight-loss journey!

Thank you! After more than four years here, I can finally say that Scotland (especially Glasgow) isn't half bad! But it took me a long time to feel this way...it's hard embarking on a new life as an adult. In my teens and all the way into my mid-twenties, I had no problem starting fresh in different situations. I had even lived abroad before, so I thought this wouldn't be as tough as it was, but maaaaan...it was TOUGH!

But I've ridden out a lot of bumps and now I'm feeling pretty good about my new home, which makes me feel like I'm in the right frame of mind for weight loss. My favorite things about Scotland are 1) the beautiful colors of the hills, 2) the great cycle trails all throughout the country and 3) the accents!

You must let me know if you come visit! emoticon

Hi everyone!

My name is Devin and I'm from Seattle, but I live in Glasgow, Scotland. I've been on Spark People before, but I'm recently back and I'm much more motivated to make positive life changes in order to reach my goals instead of just "wishing I could lose some weight." I don't know about you, but I've never wished away a single ounce!!!!!!

I got the Spark People Cookbook a few days ago and tonight I made my first recipe: the fish packets on page 224, for two servings. Here's a picture: http://www.flickr.com/photos/devinshire/84
25070322/. I made a couple of modifications; instead of zesting the lemon, I just cut up a whole lemon and split it between the two packets. I also added a few cooked mussels and some medium green chiles. They were PERFECT!!!!! It's just like a special restaurant meal that my husband and I had to celebrate our anniversary last month, except healthier and MUCH cheaper (I'm a real bargain shopper and had purchased the fish earlier at an extremely reduced price. The whole meal cost me about 2/$3). I was nearly in tears by the third bite, I'm not even joking! It's just so satisfying to make such amazing food that's also so healthy!

Oh my goodness, I've rambled on a bit and I've only made one recipe so far! I just wanted to say hello. It's great to be back on Spark People. Good luck to all of you in reaching your goals!
