Hi everyone.
I just received my SparkPeople Cookbook. I love to cook from scratch with the freshest food so I shop 2-3 times a week. I'm looking forward to using "the book". Take care all.

Some of the recipes that make too much are also easily freezable. I am cooking for one, and I would rather not eat the same meal several nights in a row. When I can freeze the leftovers, then I can eat the same meal once a week instead! I have several different dishes from the cookbook in my freezer right now.

I am divorced and don't cook much for one and this makes eating healthy a challenge. So today I took the challenge to a new level and bought this cookbook. Hoping it will challenge me to cook more. Being single I probably only have to make about 2 recipes a week as I can eat each one for several days. I don't mind eating the same thing a few times which is a good thing as so many recipes make way too much for one person.
