It is my understanding that you are making the change to vegetarianism. I have some great recipes, and it is a healthy diet if done correctly. ( I have seen some who have taken it too far, and haven't provided their bodies with the proper nutrients). I understand from your history why this is a good option for you. However, there is always the opton of being vegetarian without going completely vegan. Whatever you decide will be what is best for you.
I wish you the best as you pursue your lifegoals.

Hi Mary,

Through other teams here, I have found great recipes and ideas for veg cooking. I am not a total veg yet, I am in transition. BUT, there are foods I will really miss like white fish. I love tilapia, cod and halibut and shrimp too. And being from a family that is at least 60% diabetic and 75& heart trouble, I am concerned about what I eat. I am always looking for ways to eat healthy so that I will be here for my grand children, my oldest granddaughter has blessed us with 2 beautiful great granddaughters. I want to be here for them. too.

THANK YOU RUTHEY01 I WILL CHECK OUT THIS COOKBOOK. I AM NOT VEGETARIAN BUT I TRY TO EAT LESS MEAT AND CERTAINLY NOT AT EVERY MEAL. I WISH I COULD GO MEATLESS AS I AM AN ANIMAL LOVER AND APPALLED AT THE ENTIRE INDUSTRY, BUT ATLEAST I CAN CUT DOWN MY USAGE AND TRY NEW VEG MEALS. WHO KNOWS, MAYBE ONE DAY I CAN HAVE MEATLESS DAYS INSTEAD OF MEALS AND LEAD UP TO MEAT ONLY AFEW TIMES A WEEK!

I found a good vegan cookbook at Barnes and Noble, "Hearty Vegan meals for Monster Appetites". My omnivore hubby likes some of the recipes. He said he doesn't mind vegetarian or vegan because he can always put a steak or pork chop on the grill if he doesn't like something. We agreed that I could cook vegetarian/vegan meals 4 nights a week and just not eat the meat dish the other 3. Works for me. And he has actually liked 4 of the meals I have made in the past 2 weeks and asked me to cook them again. And one had tofu in it!!

I have come across the same issue of not having serving sizes. When I am trying to be as accurate as possible, I will measure into another container approximately what I think they are. I might use a cup, a half etc. it is a real inconvenience, and quite difficult for those who are conscious of their nutrition. I see less of this, but it does happen frequently.

HI, WELCOME TO THE GANG. I HOPE YOU CAN MAYBE MAKE ONE NEW RECIPE A WEEK OR SO AND CUT THE RECIPE IN HALF. THEN HAVE LEFTOVERS. I DOUBT YOU CAN FREEZE ANY WITH THE EUROPEAN FRIG!! MAYBE YOU COULD PLAN WITH A FRIEND AND SPLIT IT? SORRY ON THE LACK OF VEGAN, BUT EVEN IF YOU GET AFEW GOOD RECIPES AND SOME TO USE TVP OR TOFU IN PLACE OF MEAT IT WILL BE WORTH IT.

Yes indeed I noticed though I am not vegetarian... I also ordered an easy vegan cookbook from amazon as I enjoy some vegan goodies from time to time!!! The problem with that is that it has no servings per recipe. I can do with the no calories, but servings???

Hi and welcome. I love my cookbook but there isn't much in it for vegetarians. The recipes give me a good starting point to substitute with meat alternatives.

So I have finally received my cookbook!!!! I am so excited, I ordered a while back from Amazon UK. I have skimmed through it and I am quite happy. I love cookboks, it keeps my food interesting! Only minus, not just from this cookbook but in general, is that the weekly menus are so varied, it would require you to buy too much, specially if you are 1 person like me with an european fridge.
