20oz hamburger, 1 can diced tomatos, 1/2 can tomato paste, 1/2 cup brown rice short grain uncooked brown rice (cook it half way about 20 minutes), 1 c sweet pepper, 1 c onion, chili pepper & mrs dash fiesta blend to taste and WOW do you have some awesome chili! in about 40 minutes! makes 10 servings. some for now and some for later in the freezer! emoticon

Found my Vita Mix parts emoticon

Thawed some left over frozen turkey and chopped it in the Vita Mix. Then juiced some celery, onion, green pepper in it too. Mixed it all together with egg and flour and fried it in extra virgin olive oil, with fresh ground pepper and garlic salt. Would have been better if I had fresh garlic, but it was delicious anyway.

I made meatloaf tonight and grated up a bunch of zucchini for filler.

1 1/2 lb. hamburger
two slices of bread (preferably whole grain)
one egg
1 zucchini finely grated
1 pkg meatloaf seasoning mix
optional: diced onions, peppers or other veggies as appeals.

Dampen the bread and squeeze out excess moisture. Mix all ingredients together and bake for an hour or so at 375.


It is a great way to sneak veggies into the meal for those meat and potato only people.

My stomach does not handle beef well any more, but Hubby loves my meat loaf.

If I am feeling really generous, I mix up a brown sugar, catsup and mustard mix and spread it on top of the meatloaf before putting it in the oven. It is yummy, but has no nutritional value.

I like to use picante on my tacos and just a little of the taco seasoning mix. The fun thing with Granny's recipe is that you can experiment with different veggies. Corn is complimentary. I agree chopping the onions up really fine is preferable.

I just bought four pounds of ling cod for the freezer from a land pirate. His bus is decorated to the hilt in bright colors and crazy decorations. It was worth the money to visit. It looked just like a ship inside.

I have some members( Braveone) that asked for some Vegetarian recipes so here you are: hope you enjoy. Yes I tried it out!

Vegetarian Tacos Recipe

6 Servings

Prep: 20 min. Bake: 20 min.

Ingredients

6 plum tomatoes, seeded and cut into wedges
2 medium green peppers, cut into 1/2-inch slices
2 medium onions, cut into 1/2-inch wedges
1 envelope taco seasoning
3 tablespoons olive oil
1 can (16 ounces) vegetarian refried beans, warmed
12 taco shells, warmed
1 cup taco sauce

( For my family I had to finely chop the peppers and onions. Just the way they prefer them. I also had to add more taco sauce ..my bunch likes things more "juicy". So make it to your prefence but make sure you make allowances in the nutritional vaules for any changes; Barbara)

Directions
In a large bowl, combine the tomatoes, green peppers, onions, taco seasoning and oil.

Arrange in a single layer on two 15-in. x 10-in. x 1-in. baking pans. Bake, uncovered, at 475° for 20-25 minutes or until lightly browned.

Spread beans over half of each taco shell. Fill with vegetable mixture; drizzle with taco sauce.

Yield: 6 servings.

Nutrition Facts: 2 tacos equals 303 calories, 13 g fat (2 g saturated fat), 0 cholesterol, 1,252 mg sodium, 42 g carbohydrate, 8 g fiber, 7 g protein.

actually went to the birthday party so never got around to making the stew.

My friend served a ton of fruits and veggies plus a really cool roll up sandwich made from a tortilla. I am going to have to experiment with that one. It had turkey, cream cheese and lettuce rolled in it. I think maybe less cheese and more avocado and maybe some fresh salsa would be good.

Frozen lemon fish fillets microwaved, cottage cheese, carrots, banana, toast.

I did buy stew makings, so think I will make a small veggie laden stew tomorrow. I have celery, carrots, green pepper, zuchini and sweet potatoes. I wonder what sweet potatoes will taste like. Think I will add a can of diced tomatoes to that too along with my stew seasoning mix. Oooh a can of corn would be good too.

The story is set in Forks. I would have never become a fan of a vamp flick if it had not been filmed locally. I guess it is cheaper to film near Portland than Seattle and also they were probably trying to hide out from fans who already knew where Forks was.

Wow,that is interesting Cathy,I thought the movie was filmed in Forks! Actually where we are,we get missed by many rain storms,because the Olympic Mountain range and we live far enough south.Some miles north and there is more rain!? We have talked many times about moving down to Oregon,but we are rooted to well to move.What's in the pot? Nothing at the moment,but if the Rooster doesn't shut up,he's going to be,lol! No,we could never do that to our pet chickens,he stopped,he must have seen what I wrote,lol! Salmon for dinner,how do you prepare your fish for a meal?My dh's Aunt wipes her salmon with mayonnaise to help keep it from being to dry.We have it with onions,garlic and olive oil wiped and baked.

How could it possibly rain more here unless you live in the rainshadow in Sequim? You have to have as much if not more rain if you live anywhere near Seattle. The first Twilight was filmed in my hometown because it was appropriately wet enough. Bella's house is a block away from my Church. I live across the river from Washington and can see both the lights from Kalama and Woodland.

SE Asian farmed catfish. I buy it in the frozen food aisle. Since I live in the Pacific NW, salmon is my all time favorite, but I can't afford it too often. This is a nice cheap alternative. We eat a lot of tilapia too, but I think the Swai tastes better, although variety is nice. I should take up fishing in my retirement. After all, I live on the banks of the Columbia and I have a kayak.

I have never heard of Swai fish either,what is Swai fish? We are having Alaska Silver Salmon for dinner,it was was on sale and it's my favorite fish.Atlantic Salmon is Delicious too! Thank you Cathy for posting,I will look for Swai fish the next time I am at the store.

So tonight's pot consisted of sweet potatoes (microwaved) green beans (boiled) and a frozen white fish called swai steamed in olive oil in my waterless cookware, seasoned with garlic salt and ground black pepper. Yummy. To bad I ruined it all by inhaling some cookies and marshmallows.

I have been juicing quite a bit this summer.

Carrots and celery are my base then I add whatever else grabs my fancy. I have some prune juice to get rid of before it goes bad. Since I try to avoid refined sugars, I sweeten things with fruit juices.

My original carrot juice recipe called for apple juice. I just like the celery really well with it and then keep experimenting with whatever other fruits I have. Bananas are not a good choice for juicing.

I have not experimented with other vegetables yet. I would like to try a homemade V8,

I have both a juicer and a Vita mix, but the Vita Mix is missing a seal. I prefer it because there is less waste. However, the juicer works well and the sheep get the pulp and think and have served them cake.

Applesauce pancakes sound yummy. I will look it up. A healthy version for the grandkids would be a good idea.

Todays concoction in the pot.

I juiced:
bag of baby carrots
half bunch of celery

Added:
prune juice
pkt of Healthy to Go Acai natural energy boost.

The prune juice and condensed dehydrated berry powder really sweetened the drink and it was quite lovely and very filling. You can find the berry powder in a nutrition center or store.

I will say it. Refined sugar and artificial sugars are poison. Love agave. It is a natural nectar. I am very fond of substituting honey for sugar. I have not tried stevia, but I believe it is the one that Dr. Oz recommends.

I use only sugar I can not have anything else do to my allergies my mother can use splenda and I do give it to her esp with her other troubles it cooks nicer

Oh don't get me started on those sweeteners,I will try to keep my opinions to myself,lol,oh this is so hard to not say my opinion.Okay I will not use them personally and I will say No more.Have any of you tried maple syrup,agave,or stevia? I have a really good easy cobbler recipe from Spark People recipes I will share with you.I have to go find it and post in a while!

splenda makes me feel sick and gives me worse hot flashes than sugar. What is in that stuff. I do admit it tastes better than most artificial sweeteners.

This is a Spark People recipe, I have used several times. I alter my fruit as to what I have on hand.

I fixed this last night with fresh pears off our trees, it is still easy and delicious.Always a hit!


Apple Crisp

Ingredients

3 medium baking apples, cored, sliced thin
1 tsp cinnamon
2 Tbsp sugar
2 Tbsp flour

Topping:
1 cup quick oats
1 tsp vanilla
1/2 tsp cinnamon
1/4 cup brown sugar
2 Tbsp heart-healthy margarine


Directions

Mix first four ingredients and place into 9-inch (square or round) baking dish.

In small bowl, mix Topping ingredients until crumbly. Sprinkle topping over the apples.

Bake at 325 degrees until apples are soft and topping is golden brown (about 30 minutes).

YUMMY! Dee, Cathy and Barb I have copied all your wonderful recipes and added them to my collection. We love trying all types of food and all these sound so "YUMMY".

Barb I will see if I can fine Mr. Picky some good veggie recipes! I know what it is like having a picky eater in the house. I have one too. Phillip!

I found this one on Spark this morning and have it in the pot as I type! It sounds terrific and smells great.


Slow Cooker Creamy Italian Chicken

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

Ingredients

*2 lbs boneless, skinless chicken breasts
*1 pkg Good Seasons Italian dressing mix
* 1/4 cup water
* 1 8oz pkg low fat cream cheese
*1 can 98% fat free cream of chicken soup
*3 cups cooked white, long grain rice


Directions

*1. Place chicken in crock pot
*2. Mix together Italian dressing mix and water. Pour over chicken.
*3. Cover and cook on high for 4 hours OR low for 8 hours.
*4. Mix together cream cheese and soup in separate bowl.
*5. Carefully remove chicken from crock pot to plate.
*6. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom.
*7. Return chicken to crock pot and mix gently to shred the chicken.
*8. Cook on LOW until heated through.
*Serve with rice or noodles.

**You may add skim or low fat milk in very small quantities to thin the sauce a little. It does not significantly affect the nutritional value if you use up to 2 tablespoons**

Makes 6 servings. Approximately 2/3 cup mixture with 1/2 cup rice.

This recipe can be made with FAT FREE cream cheese and it saves about 6 grams of fat. However, I feel that the dish benefits from the flavor of the low fat over the fat free.

Everyone of these recipes appeal to me emoticon ! However, my
dear Georgian hubby, won't eat a bite of chicken. I know, he doesn't
know what he's missing. He is almost a vegetarian.

I am planning to copy some of these to make, when I have company.
I found this one on the internet. It is similar to one that I found on SP,
but I used whole wheat flour, not the cereal. I love these for breakfast,
so did DH and my company. I plan to make them this way, from now on.

Post Raisin Bran Apple-Walnut Muffins
Makes 12 muffins

1-1/2 cups flour~~I will use whole wheat
1/3 cup firmly packed brown sugar
1 tbsp baking powder
1 tsp ground cinnamon
1 egg
1 cup fat-free milk
1/3 cup unsweetened applesauce
1 Tbsp vegetable oil~~I will use coconut oil
1-1/2 cups Post Raisin Bran Cereal
1 median apple, peeled, finely chopped (about 3/4 cup)
3/4 cup chopped walnuts

Directions
Preheat oven to 425 F. Mix flour, sugar, baking powder and cinnamon in a large
bowl, set aside. Beat egg, milk, applesauce and oil in small bowl with wire whisk
until well blended. Stir in apples and walnuts. Spoon batter evenly into 12 greased
or paper-lined medium muffin cups. Bake for 20 minutes or until toothpick inserted
in centers comes out clean. Cool for 5 minutes.

Note: Walnuts can be reduced to 1/2 cup. I always use a mixture of sugar &
cinnamon, and sprinkle on top of each muffin, after baking. Delicious!

I am going to have to try the chicken recipes.


So, most of the things I cook are just experiments and quantities are flexible.


Stir Fry:
Stir fry chicken, turkey, tofu or fish with onions and celery and grated carrot in olive oil till tender or done.
Add some chopped tomatoes or fresh salsa
Add other left over veggies and/or cooked meat
Add a package of frozen broccoli

I add a half cup water or so also to help steam the broccoli faster and slap the lid on. I usually cook this at a medium temp or 3 or 4 on the stove top dial.

Check periodically to stir and make sure it is not burning. When veggies are to the correct texture top with terriyaki or other favorite sauces. I like to experiment. Peanut sauce is good, but too high in calories.

Cook and stir a couple more minutes and serve. Yummmm..........

take a large plastic bag or container rinse chicken I like pieces and add a bit of oil lemons, lemon juice fresh garlic get a clove and cut and chop to fine peieces how many cloves depends on how much garlic you like .. add orengano and basil and let sit in the refridge for hours
roasting pan and add chicken and I season with grandulated garlic and papakri and bake in oven 350 degrees

Sounds great Cathy. I will have to try it! Remember what I said about numbers...it is only a thing..if you have them great if not post your favorite recipe anyway.

Everyone knows I live on a farm and life is always hectic so I try to find things I can either fix fast or put on and leave cooking while I am working outside and it will be finished cooking by the time we are ready to eat. Like a personal chef!

So I have used recipes like this one several times through the years. Add a sald and veggie and we are set to eat!

Slow-Cooker Salsa Chicken

480 Minutes to Prepare and Cook

Ingredients

4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream


Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.

NOTES:
You may use half the packet of taco seasoning (I have started doing this to reduce sodium content myself)

Some slow cookers cook faster than others. Mine is a true slow cooker (have had it over 10 years.) The newer ones cook a bit faster and you may have to adjust your cooking time based on that!

I get many emails asking how much a serving is. I don't think I have ever measured it sorry! I just know that five people eat and I usually have one serving left over.

Sounds delicious.

I am not a numbers person, more a cut and burn mentality, so don't have the numbers, but this is my favorite salad.

Mixed greens
whatever other fresh veggies you have laying around
left over fish, chicken or turkey
chopped almonds or walnuts
sprinkle of roasted sunflower seeds for texture and flavor boost

dressing:
1T hummus
1T plain greek yogurt
2-4 T fresh chopped salsa

Mix together and it is yummy. Also, it is different every time.

I love to cook! I know many women and men know days share the responsibility of making meals for their family and coming up with quick healthy ideas sometimes become challenging.
It is also a boring ordeal with every week you know what's for dinner by the day of the week.

Well why not post your favorite recipes and shake things up!

By sharing this gives our friends an opportunity to look at a glance at what will become a recipe file to choose from every week. Please make sure to include the nutritional values to the meal if you have it available. This will make it easy for everyone to see the calories,fat,sodium everything we are tracking to make our lives healthier. By chance your recipe does not have this...post it anyway. That is the great thing about Spark, we can add this to our tracker when we prepare it and retrieve the information.

This first recipe is one I have used many times. I make a few changes for my family as I am sure you may too.

Crunchy Asian Chicken Salad


yield: Makes 3 servings (3 cups)

Kids and adults alike will enjoy this lunch. Store this tasty salad in a wide-mouthed thermal container, use several Bibb or Boston lettuce leaves to wrap around the salad instead of bread, and pack the nuts separately in a little plastic bag for sprinkling. For those who can take the heat, add a splash of Chinese hot oil or hot sesame oil to the salad.

Ingredients

Salad:
1 1/2 cups finely diced cooked chicken meat (6 ounces, about 1 1/2 breast halves)
6 canned peeled water chestnuts, rinsed and chopped
1 carrot, peeled and shredded
1 small celery rib, finely diced
1/2 cup diced apple, such as Gala or Golden Delicious (about 1/2 apple)

Sauce:
1 tablespoon natural peanut butter or sesame tahini
1 tablespoon seasoned rice vinegar
3/4 tablespoon soy sauce
2 tablespoons mayonnaise
1 tablespoon minced fresh chives (optional)
1/4 cup roasted soy nuts or coarsely chopped unsalted peanuts
1 teaspoon hot sesame oil (optional)


Preparation

Combine the chicken, water chestnuts, carrot, celery and apple in a bowl and stir to mix.
Whisk together the peanut butter, vinegar and soy sauce until smooth. Whisk in the mayonnaise and chives, if using, spoon the dressing over the salad, and mix well. Sprinkle with soy nuts just before serving.
