Good to know! Since I have some, guess I'll try it and give you all my feedback. I have tried making some biscuits with it. They weren't terrific, but satisfied my need for some kind of bread

IF you love butter then you are in the right eating area..:) Just saying we are not afraid of healthy fats...
No, I have not tried the Carbquik. I'm sure it would be ok. One thing you should be careful of it too many of us started out using commercial foods that were "low carb" but other than that they were not clean as in additives. I tend to make my own to prevent additives.

My thanks to both of you! I did pick up some Almond Meal and Flaxseed Meal at Trader Joe's while I was back home last week. I think I saw some of this flour there, but its too far away from me now to go there. I will check the grocery stores, GNC, Health Food Stores (if we have any down here) for that flour. If not, I will order some from Netrition. I have ordered from them before and I really liked some of their snacks.

Have either of you tried the CarbQuik that you can make biscuits, pancakes and other stuff with. A pancake made with that is only 2 carbs. I haven't tried it yet, but I did get a box to see if they taste good enough. I kind of miss not having a pancake now and then. I never did put syrup on them, just LOTS of butter!! lol Only one in my family that did that! LOL

One waffle has 5 carbs.

Earth Fare or krogers are good places to check...also find good buys at netrition.com and other websites for items I can't find locally. We want to support our local healthstores if possible.

Lady, you can make your own almond flour by running almonds (I find that sliced almonds work best) through your food processor until it turns into flour. Or you can buy it, and also the coconut flour, at health food stores and some grocery stores. Bob's Red Mill makes both kinds of flour, and a lot of grocery stores carry their products. I can get them both at Krogers, which is a national chain that is affiliated with Fred Meyers and a few others.

DixieDoodleDean.... where did you find that coconut & almond flour? and how many carbs did it work out to be per waffle? Sounds delish!

Welcome:

I've got a low carb waffle that even my husband loves. It is high fat as I eat nutritional ketogenic (high fat, moderate protein, low low carb)

Try it:
5 eggs
8 oz cream cheese
1/4 cup coconut flour
1/4 cup almond flour
one pack stevia (or sweetner you like)_
splash vanilla
teaspoon baking powder
1/2 teaspoon baking soda

I bake in waffle iron, cover in butter, unsweet syrup or fresh fruit like 1/2 peach that I microwave with the butter and top it off with a real whipped cream no sugar...YUM that will get you through the waffle day with the family.

Don't worry about the saturated fat for you. It's actually good for you. It doesn't go well with the carbs that the rest of the family are eating, though.

Hi! I'm Kelly! I'm 29 and momma too 2 kids. I started working the Atkins program a week ago, and it is working well. I'm down 4lbs! I'm still in phase one and plan to stay here for about 3 weeks my initial goal is to drop this pesky 18 lbs to get below 200 before I swap to phase II :) I'm starting to reevaluate many of my life choices and I'm trying to get healthy for my kids and for me, so I can be here for them. This is a tough diet in my household because everyone else in my family are carb-aholics..... biscuits, bread, everything. We have pancakes or waffles in this house at least once a week.... it's difficult. I'm trying to keep it low carb and attempting to avoid the sat fat. . . but it's a little rough in the begining! :) :) Looking forward to hearing tips from other LC folks and celebrate the results of our new (or old) journeys!

Working towards a better me one day at a time.
