I am married (empty nesters), work outside the home, live in Olathe, KS and am looking for easy, healthy (light) meal ideas. Cooking for two is harder than I thought it would be. I went from dally cooking when the kids were younger, to batch cooking a couple times a month when they got older and didn’t eat every meal at home due to schedules, to barely cooking at all since it is just the two of us at home. I used to enjoy coking but now it is a chore. We have gotten to where we eat out or buy prepackaged meals or I find myself just fixing a peanut butter sandwich. Eating out is expensive and boring. We have long, odd working hours that don’t always coincide. I want to get back to home cooking as I always found setting out a tasty home cooked meal to be a symbol of the love I have for my family. I want that feeling and enthusiasm for cooking again.
