1. Squash, beans, applesauce can be substituted for fat (oil) and eggs in recipes. Check online for articles that show you how to do this.

2. For ground meats, you can blend a cup of black beans and mix it in with the meat. You can also blend up some mushrooms (fresh) and spinach (I prefer fresh in season) and add that to the ground meat. I like about 50% meat 50% blended vegetables. Long way to getting in your veggies. This is good for burgers, meatloaf, even salmon loaf. Have fun with this

3. We do a wok /skillet grill once a week. To 1 pound of meat (usually chicken or pork), I add 1/2 small head of cabbage, 1 onion sliced into 8ths, 4 stalks of celery chopped small, minced garlic 1 or 2 Tablespoons, some times I add a cup of julienne carrots. I "stir-fry" in the 10" skillet. using olive oil.

I have been sneaking in the zucchini for awhile now I evan make a zucchini upside down pineapple cake lol!!! the kids love it and I like to use unsweetened applesauce for my sugar, but I must say I have never tried spaghetti squash, I have seen it in the store but never knew what to do with it maybe I can give it shot!! Thank you for the suggestions!!!

A couple"new" veggies i have been adding to my diet is zuchinni and spaghetti squash. FYI Zuchinni can be hidden in anything and everything!! It is has no taste so it is perfect for hiding in things. Muffins, bannna bread, homemade meatballs, lasgana, and more! I read below you like zuchinni but maybe trying to hide it into the families food lol! Now spaghetti squash is pretty good and i have been subbing it for pasta dishes. I found out yesterday that spaghetti squash is only 10 calories per 1/4 cup!

Thank you so much for the information, I will give the pita pockets a try that sounds very good, so does the zucchini, but I'm odd I like zucchini, I was looking up some of the recipes on this site and I have a few more ideas to try out yet, everyone in the family loves the fruits its just getting them to eat the veggies!! Again I thank you all for the awesome advice and ways to make cooking so much more than butter and cheese!!

Here are several suggestions for eating veggies that work for me and maybe one or two will perk up your desire. I bought whole wheat pita pockets and I make a green salad with lettuce, spinach, tomatos, avocado, etc add a can of tuna canned in water drained and use low cal salad dressing then stuff lots of salad into the pita pockets. I love that and hubby eats it as well not liking it as much as I do. I also slice fresh zucchini into a pan on butter spray, sauté and turn over and this time sprinkle with parmesan cheese. I could live on those. Now my third love is that I make east indian curry. You sauté several onions chopped up and then add one can of tomatos (28 oz) and one can of water (28 oz) let it cook for about 6-8hrs on very low heat. so it is very mushy and add 2 tbsp. chicken boulion powder, 1 tbsp. cumin, 2tbsp. curry powder, 1/4tsp. cayenne pepper and with this curry you can put small portions labeled into your fridge and freezer till you need to make more. I serve the east indian curry on chopped cooked veggies like broccoli, cauliflower and carrots. Good luck with perking up your desire for vegetables. I love this stuff and could live on it though once in a while I desire protein.

hello my name is Amanda, I am 33 years old and I make all our meals at home we very rarely go out to eat, I plan my meals every friday before I go shopping for the week my issue is I make bad choices with nutrition. Everything I make is loaded with to much of everything so I need to learn to add more veggies and lighten up on the cheese and butter. I also need help finding kid friendly foods my kids are super picky its hard to get them to touch veggies that are not fried. ok I will stop rambling now have a great day everyone!!
