I'm just joining the Challenge and am looking forward to learning more about healthy cooking. I tend to prefer regular fat and haven't found many low-fat options that I enjoy. I have moved over to cooking with olive oil and think that has been a good place to start modifying my diet. Today I'm going to make manicotti using low-fat options, I hope the flavor isn't changed too much.
