I find the biggest challenge I have in eating healthy is finding substitutes for the unhealthy ingredients in the foods we are conditioned to love from young. My bigges challenge is my love of fried food.
I love fried eggplant and have found that I now bake my eggplant, stringbeans to snack on and even my chicken. I dip eggplant or chicken in beat raw egg with little olive oil, coat with bread crumbs lightly then spray cookie sheet with oil place eggplant or chicken on top and back....next best thing to fried and legal too...lol
