I understand that the budget and healthy food can sometimes be a challenge. I have found doing some vegetarian options during the week helps. There is a great sweet potato black bean buritto recipe in sparkrecipes. Eggplant parmesean is also good. There are a number of great vegetarian pasta recipes. Soup recipes are also great as you don't usually need as much meat. Also I have found that if you buy bone in/ skin on chicken and then take the skin off yourself it saves money. I actually prefer to cook chicken with the bone on and then remove after it is cooked. I think it adds to the flavor. Roasting a chicken or two is also great when they go on sale because it's good roasted and the leftovers are great for soups and pasta dishes. I hope this is somewhat helpful. Hi there, I am excited to begin this challenge. I have about 50 pounds left to lose. I am also on a very tight budget which makes this challenge even more difficult. Any suggestions on cooking on for a family on a budget would be greatly appreciated.
