Huge sympathy for the knee injury. I'm in week three and still getting used to the idea of not being as mobile. The stuffed zucchini sounds super delicious. We've also had stuffed mushroom caps that are really good as well.

sounds like your off to a good start just take your time and do what you can. stay active if only just standing up for few minute and walk aroun the house during comercials will help out. welcome to the team

i joined over a week or more. so i am new. and new to this challenge. i found a vegetarian cookbook and i am trying out new recipes. my first one was stuffed zucchini. it was good, but needed more time to cook. i have a hard time exercising due to my knee problem. but i am going to the gym and getting on the tread mill. i was doing water exercises with a group, but my knee wont let me do that.
