Fran533 you will definitely enjoy the chicken salad. I had it for lunch last week. Quick and easy to make. I slow simmered the chicken on the stove top with some onion and celery and then froze the liquid for use later as soup stock.

I was renewed and energized after reading The Spark and Chef Meg's Cookbook. As part of my goals, I decided to jump in and get involved in one of the SparkTeams. I am passionate about cooking and love to try new recipes. One of my favourites packed lunches is Chef Meg's Black Bean & Corn Salad (p121) with cooked chicken or tuna. What's yours?
