I cook in bulk, but I don't mix anything. I bake my chicken breasts, cook up veggies, etc and then I use them to make sandwiches, put over baked potatoes, noodles, whatever I feel like. So prepping to like 90% helps me stick to my plan.
Start with the nights you are home. Cook healthy on those nights. Would it be possible for you to cook double the amount on one of those nights so that you have leftovers for another night? There are lots of creative ideas on the recipes page for things to do with leftovers. Good luck.
