Hello everyone - my name is Karyn and I rejoined SparkPeople in March to assist in adopting a healthy lifestyle for rest of my life. I am a diabetic who is allergic to artificial sweeteners and my triglycerides are out of control and I am allergic to statins (the miracle drug for cholesterol). We have been eating healthy for 5 + years - my husband had lung cancer surgery in June 2009, but chicken breast can get kind of boring. From tracking everything I eat I have never get enough of certain nutrients and often not enough calories, so I am here to learn new ways to do healthy cooking.

I need to learn to plan better so I just don't grab a sandwich. It may be low in calories but not as balanced as a fully cooked meal.

HI, I'm sirena. Welcome!
I'm sure that you will find out about meal portions by reading articles and posting questions. Someone out there probably has the same issues and can give you solutions.
I know that when I cook and there are leftovers, I just pack it up and use it as an extra meal for lunch or dinner.
You also might freeze it and use it when you don't feel like cooking.

My DH and i are terrible about cooking. we dont have kids and we generally dont have much planned at night so we generally nap and relax. he is a picky eater and we dont always take the time to cook. Hi, I'm Kathy and I am really not a cook, my husband enjoys cooking and I love to eat it. Since starting SP I have only lost 4 lbs but I haven't weighed myself for quite awhile d/t the above, but I have come to the decision that I really need to start in with some of the cooking to aid in my weight loss and help my husband with his weight also. I am gluten intolerant and I've noticed the SP diet consists of lots of wheat, but I have found a couple of recipe books that are gluten-free, so here goes a new journey.

Hi, my name is Sheila. I joined this challenge to help me focus on creating healthy meals for my family. I love to cook and spend a lot of time in the kitchen. My challenge is that my husband does not want to eat healthy looking or tasting foods. Hi, I'm Pam. I rejoined SP about 10 days ago. I signed up for the Spark Coach and after tracking my food for about a week, I noticed that I really wasn't as "on spot" with my food as I had thought that I was. I have gone through my kitchen before and cleaned it out and it has stayed pretty much the way it was but I have also allowed some "mini clutter" of older food items to remain so I am going to do that tomorrow.

I did some "research" and came across this challenge and team and joined it yesterday but didn't get a chance to get on here because I was busy doing just about everything else. LOL.

Now, that today is calmer, I am going to sit here and hopefully learn a lot. I love to cook. I actually prefer to cook at home although I still love to eat out. I am a "frugal gourmet". That means that I take one dish and expand off of that until everything is eaten up. I also enjoy leftovers and I plan as I go. I hope this approach is okay. As long as I have healthy food in the house, I eat healthy. Keeping the "not so healthy" foods out is my best defense against indulging in them.

HI, I was halfway through this challenge and somehow it disappeared from my start page. Sure enough when I searched for the challenge it did not recognize me as part of the team, so I'm starting again. A repeat of the information (and the effort) is never wasted on me...lol. Glad to be back.

Hi, my name is Dee and although I've had lots of years of cooking, it's not generally considered healthy cooking. We were brought up in the meat and potatoes era and that's how we cooked and ate. Now I need to learn to cook better.

Hubby and I have been trying to eat better since the first of the year by eating just lean meat and veggies, but it's getting boring. I'd like to find some healthy, exciting meals to cook. Especially if they include lean meats and veggies.

I'm happy to have found this challenge and hope to prosper from it.

Hi! I have been trying to focus on a healthier lifestyle and must cook healthier meals for myself and my husband. I love cooking and have always made comfort foods which are high in calories and fat...not any more...no more comfort foods for me. I want to start eating clean.

I am hoping to learn how to prepare better meals at home and not have to eat out.

Hello all: I have been dieting for years. If I could lose overnight what I have lost and regained I would be a healthy weight. I know this is really about lifestyle change and I need to learn to slow down, take it a step at a time instead of trying to change everything at once. Hoping this challenge will help with that.

I am already beginning to make healthier changes with every small step I take. I haven't seen any weight loss yet but I am not giving up. My goal for this challenge is to begin cooking more at home versus grabbing something at a fast food restaurant. I am looking forward from learning from this challenge.
