I"m so sorry for what you and your mom are going through.
If you're taking care of her dogs already, then use those dogs for exercise. Take them for a walk 3-4 times per day and spend at least 10 minutes walking with them. If they just go out in the yard, then go out with them and do some aerobics while you're waiting for them to do their business.
For meals, I find that planning ahead makes all the difference and saves tons of time! There are grocery stores that will do the shopping for you so that all you need to do is drive up and pay. If you don't have one of those around, having a list still makes it faster. You might even be able to get a friend to run to the store for you.
I also plan meals that build on each other. Only twice a week do I make a 30 minute meal. The rest of the time I tend to make it 10 minutes or less by using leftovers to make something new. For example, a flank steak or london broil is too big for one meal. I use the leftovers another night to make a warm steak salad or steak sandwiches. Slow cook a whole bag of chicken breasts on Sunday or Monday and serve it with rice and steamed veggies. Then you can use part of the leftover chicken for chicken fried rice (just add leftover rice and a bag of frozen peas with your sauce of choice) and chicken salad another night.
Another little hidden feature of Sparkpeople- if you plan your meals in advance in your Food Tracker, Spark can generate your grocery list for you! I LOVE this feature! I enter all my recipes into SparkRecipes so I can just click to add them to my tracker. Then Sparkpeople tracker actually pulls those grocery items from the recipe! I love this so much it saves me tons of time!
