Great to have you on board and I look forward to hearing more about fermented hot sauce.

I too need to avoid the sugars but understood they were devoured by the yeasts and bacteria in Kombucha though I am awaiting an authoritative ruling on that. I have no idea of the calorific value of Kombucha nor of Kefir but I do know it is less than in the basic ingredients.

Hi everyone!
I have been making kraut and fermented hot sauce for years! I don't do kombucha because I am avoiding the sugars. Anyhow, I am pleased to find this group.
