Great to have you on board and I look forward to hearing more about fermented hot sauce.
I too need to avoid the sugars but understood they were devoured by the yeasts and bacteria in Kombucha though I am awaiting an authoritative ruling on that. I have no idea of the calorific value of Kombucha nor of Kefir but I do know it is less than in the basic ingredients.
