hi mandy. this is also my second attempt. Time is a big challenge generally. my advice is; cook recipes meant for four then freeze the rest. also, use a crockpot to prepare some meals. just throw the ingredients into the pot and come home from work to a ready meal.

Hi Mandy and WELCOME!! there are lots of single mom groups, and go to taste of and look under meals for one or 2..many are very healthy and spark-compatible!!

Hi everyone! This is my 2nd time starting SparkPeople and I'm very motivated to make these changes in my life. I struggle with working 12 hour days, being a single mother with 50% custody of my son therefore it's hard to cook for one or two people, and just not having enough time to prepare a lot of foods. I'm also not the greatest cook. Anyone with similar issues that may have any suggestions, please let me know. Thanks!!
