It varies... I, too, have a "Peter Pan" son ("ruderless," I believe is the way Sly aptly described it/tee hee). If he's home, I sometimes cook for his herd of teenage boys REALLY seem to appreciate a home cooked meal. On those days, I may cook for 6-8. On other days it's my 16 year old dancer daughter and me. She's so supportive of this process and is a loving cheerleader in this life style transition. Added benefit for Madison is that teachers at her studio even noticed that she's lost weight (not that she needed to lose any!) because of the healthy changes.
I am cooking for 3 people. My 2 children (and their friends) my husband. He likes meat and potatoes a lot. I like vegetarian, my kids like pizza & mac and cheese, so it's tricky. I end up eating unhealthy because the Pizza and mac and cheese is so irresistible. I think it would be easier to make 3 or 4 different meals, then to settle for less healthy food with a lot of calories. Easier for sure, but I have gotten very creative finding ways to combine healthy and pizza, and potatoes.

Two or three, if my twenty-two year old Peter Pan of a son happens to be home. Of course, it's a crapshoot as to whether my husband or I will be doing the cooking. And that's OK, because he's cooking healthy now too.

Most of the time I'm cooking something simple for ME, but some weekends I cook or we cook for both my husband and I.
Prior to my lifestyle change, one or both of us were always on some type of diet. A long time ago, we stopped eating actual meals at night because it was so late when we ate and too many calories too. So we went to light, quick foods in the evening. He doesn't need to lose weight and isn't particularly interested in eating healthy all of the time. He eats what he wants and doesn't gain. So he gets his big meal at lunch everyday and evenings are light salads, sandwiches, soup, etc. We also have totally different taste's and eating schedules so we are pretty much to each his own.
When we grill on weekends, we generally do that together and plan what we both like, in a healthy way. In the Fall and Winter I do enjoy crockpot cooking which is nice to have everything cooked together.
