Well, Monday (labor day) I made grilled chicken chunks with quinoa, grilled broccoli normandy then made up a spinach & romaine hearts salad w/avocado & tomatoes, fat free cottage cheese, plain fat free Greek yogurt, whole grain crackers, an apple and a nutri grain bar. I eat something every 2 hours. The chicken & quinoa will last 2-3 lunches...I've got some tilapia I can grill for Friday.

Okay, so what are you fixing for dinner this Sunday? Or is that where we need to start, giving you an idea for a big dinner that could be turned into 5-6 lunches?

Hi!

This just might be my favorite topic, even if I am a little OCD about my lunch cooler!!

I actually have 4 different soft-sided coolers and I pack my lunches religously every Sunday night. I will soon have a 5th, but haven't found that perfect cooler yet! And yes, I do have an extra fridge in the garage that will need to be plugged back in now that school is starting up and I will make my 3 school-age kids do the same thing.

I pack all my meals and snacks for each day and place them in the fridge so all I have to do is grab and run in the morning.

I pack dry oatmeal with brown sugar and fruit (on the side) for breakfast, then just get hot water from the water cooler to pour over the dry oatmeal and let it sit for 10 minutes while I catch up on emails. I have a snack mid-morning, usually a 4oz greek yogurt that I mix with 1Tbs of crunchy peanut butter (I keep this in my desk drawer).

Lunch is sometimes leftovers, but sometimes a special meal made on Saturday afternoon - just for my lunch. Makes me feel special at lunch time :) This week was frozen bread dough, thawed, and stuffed with black bean and corn salsa and baked til the bread is done. I made about 16 of these, packed one for each day this week, and froze the rest. I also have a fruit or huge bag of veggies with this.

My afternoon snack is ALWAYS a hard-boiled egg and fruit. I LOVE, LOVE, LOVE watermelon and that's my afternoon fruit of choice right now, but in the winter, that gets way too expensive, so it's usually an apple.

I'm thinking of putting together a trail mix for the ride home because it's about a half hour, and I usually end up snacking until dinner is ready, so I thought some mindless snacking on my drive home might help with that.

I warned you that I'm a little OCD about this subject - hubby just laughs about it, but he knows better than to get in the way. If I have to pack a lunch on the fly in the morning, I get all flustered and end up with something I won't even eat - usually ends up being a take-out day!!

Hello team!

I am not new to Spark at all, been on here going on 4 years. Just joined this team because I take my lunch to work and am looking for new ideas. I am single so I don't cook dinner every night that would leave me leftovers. My regular routine is to cook a big meal on Sunday and portion it out for a few days. I also pack healthy snacks.

Looking forward to what this group has to offer; glad to see it's current & active!
