Congrats on your new career - that sounds exciting!
I always, always take my lunch to work, but it's more because I'm too cheap to eat out every day :)
I'm really good about the "snacks" part of my lunch - I have that down to a science, but I struggle with the actual "lunch" portion. It usually just ends up being a small dish of leftovers from dinner. Here's what I normally bring for my whole work day:
Breakfast - oatmeal with fruit (whatever is on sale)
1st snack - greek yogurt and fresh vegetables (carrots, peppers, celery)
Lunch - usually leftovers or a pb&j sandwich. Today is creamed spinach and a hard-boiled egg because I'm trying to pack in the iron to donate blood tomorrow.
2nd snack - hard-boiled egg & fresh fruit
It's a nine-hour day, and I find that I eat way less if I have healthy snacks every few hours, not to mention that it keeps my blood sugar more steady and I don't get shaky mid-afternoon.
I LOVE hard-boiled eggs for a snack! and for lunch, and pretty much any time! It's a lot of protein (and very filling) for just a few calories (about 75). Plus, they're highly-portable, and easy to grab out of your lunchbox on the run if you're really busy.

Hi Liz. I am so glad to have you join the club!! I am trying to bring the team back, to make it what members want. I know there are idea threads, including recipes shared in the past which have not been active in a while. I started one, a challenge to share wrap ideas. No interest there either.
I am currently retired but taught school for 42 years and took my lunch most days. I have learned so much since coming to SP. I'm sorry to say, my lunches back then weren't always the healthiest.
But even though I'm retired, I still pack my lunch for the next day. I don't have the time to be in the kitchen all the time. Having a lunch packed lets me take it with me wherever my schedule takes me that day. :D
So you are welcome to start new questions in discussions. I am always ready to put in my 2 cents worth of ideas and show off my vast knowledge of fast lunch food packing. ; )

Hi guys! Not only and I new to sparks but I'm about to take my boards to become an RN. I have two children. One going into 1st grade and one Pre-K 4. I looking for any healthy lunch ideas for myself and my boys. My job now has me working all kinds of hrs and I'm sure once I become a nurse it will get wilder lol.
