Congrats on your new career - that sounds exciting!
I always, always take my lunch to work, but it's more because I'm too cheap to eat out every day :)
I'm really good about the "snacks" part of my lunch - I have that down to a science, but I struggle with the actual "lunch" portion. It usually just ends up being a small dish of leftovers from dinner. Here's what I normally bring for my whole work day:
Breakfast - oatmeal with fruit (whatever is on sale)
1st snack - greek yogurt and fresh vegetables (carrots, peppers, celery)
Lunch - usually leftovers or a pb&j sandwich. Today is creamed spinach and a hard-boiled egg because I'm trying to pack in the iron to donate blood tomorrow.
2nd snack - hard-boiled egg & fresh fruit
It's a nine-hour day, and I find that I eat way less if I have healthy snacks every few hours, not to mention that it keeps my blood sugar more steady and I don't get shaky mid-afternoon.
I LOVE hard-boiled eggs for a snack! and for lunch, and pretty much any time! It's a lot of protein (and very filling) for just a few calories (about 75). Plus, they're highly-portable, and easy to grab out of your lunchbox on the run if you're really busy.
