I do a lot of salads and try to change them up every time I have one. There are some great ones in Spark Recipes. Also you can do wraps, fruit and yogurt, soup, anything you like. Just remember to bring snacks along as well. Carrot and celery sticks are great, as are nuts. I usually plan my lunch when I plan my menu for the week so I can buy everything I need at one time. I make a lot of soups that I freeze and then have for lunch. It is great.
