Today I had one of my favorite lunches. I microwaved a package of frozen brown rice and a cup of frozen mixed vegetables, then tossed them together with a sprinkling of garlic-pepper seasoning. Yum! It took a grand total of 5 minutes for me to prepare it. For dessert, I had a lovely, juicy purple plum.

Another favorite of mine is to top 2 cups of chopped romaine lettuce with some sliced green olives, sliced kalamati (spelling?) olives, 1/4 cup of fat-free crumbled feta cheese, a handful of sliced almonds and a couple of tablespoons of Greek vinaigrette dressing. If I happen to have some leftover grilled chicken or steak, I chop that up and throw it in there, too.

Hi I walk and my local market puts the leftover roast chickens on 1/2 price after 7pm I'll pick up one or two and prewashed greens and grape tomatoes. This allows me to make a quick salad at home or ready for a quick packed lunch I'll vary the taste with dressing and other vegetables

That is a great idea unfortunately I'm allergic to fish (and of course I live on the Gulf Coast typical) I wonder if that would work with chicken you get in a can?

If you are not too picky to eat tuna fish, take a canof tuna, peel off the "needs no canopener" lid, squeeze out the juice in the can and replace it with the salad dressing of your choice. Stir it up in the can and use a fork to dig it out and put it on some high fiber crackers (triscuits/ some wheat thins. No dishes to do. Change the flavor of the salad dressings and the crackers for variety. Requires no cooking and no refrigeration except for the salad dressing maybe.

I really want to get the Spark book but with my financial situation they way it is right now I'm not too sure I can afford it which is really sad. emoticon

Get some boneless chicken breasts, a couple of packets or small cans of tuna (or any meat or seafood you like that comes pre-cooked and pre-packaged).

Grill or bake the chicken breast and cut them into bite-sized pieces. Divide into serving-sized packages. While the chicken is cooking, make up a large bowl of salad with whatever chopped veggies you like and store it in the fridge. You might want to hard boil some eggs while you're at it.You can do these steps in about half an hour.

When lunchtime comes, dish up a serving of the salad, top with a serving of chicken, or tuna (or whatever pre-cooked, pre-packaged meat you picked), and/or slice one of your hard-boiled eggs on top. Add a couple of tablespoons of low-fat or fat-free salad dressing and you have lunch ready in like 5 minutes. Use the salad as your base and rotate different toppings so it won't feel like you're eating the same thing every day.

Very little actual cooking required and a big bowl of salad will provide you with lunch for several days.

I try and make extra dinners but that doesn't work all of the time.

the book is very good. I think you can read the 27 secrets to success from the book thru spark e-mail. Also costco has the book or there may be a coupon.

How about soup or meals you can heat up? Spark recipes has some quick & easy ones.

That is part of the problem. Since I have moved I do not have a microwave yet.

I see that you bought the Spark book I am thinking about buying it but money is a little right and was wondering if it was worth me spending the money.

lunch at home is hard for me also. I think the key is to have healthy items on hand that are quick & easy. What about meals you can microwave?

I need help when it comes to eating especially lunches. I work at home and I'm tired of eating sandwiches but I'm a very picky eater. I am recently divorced and I am attending college to get my Associates degree. Any advice anyone can give me will be appreciated.
