I love to take a flat out wrap w/laughing cow cheese, some turkey, peppers and spinach. A really good filling lunch!

I like to prep healthy lunches for during the work week whenever I have time. For this week I made 2 meals. Spaghetti squash with jarred Eating Right tomato sauce(from Safeway) and homemade turkey meatballs. The other is grilled lemon chicken with rosemary carrots and brown rice.

This should help keep me from getting bored with my food, especially since I eat lunch 5 days a week away from home and dinner 3 nights a week.

your egg beater sandwiches are a good idea; esp for a take along breakfast or lunch. I may use your idea for an up coming event where I need to take my own lunch or breakfast. Only thing is that turkey bacon has more sodium in it than regular bacon. But regular bacon has much more fat.

I love making egg beaters sandwiches - I use the oroweat sandwich thins, microwave the eggs, use a laughing cow instead of mayo or mustard, and then add tons of veggies. If I want more protein, I'll frequently throw in some turkey bacon - my favorite combo is egg beaters, turkey bacon, laughing cow, tomato, and some tapatio sauce. I will also omit the eggs, and make my own little BLT with the turkey bacon, tomatos, and I like to add sprouts to almost anything. Yum yum yum.

Do u make wraps? I like them with laughing cow cheese, fresh spinach, tomato, turkey...yummO!! Also, if ur salads are plain, u mite try adding dried cranberries and walnuts...it mixes things up a lil. I like some of the progresso soups. Also, if u search Sparkrecipes...there are tons of good ones...Im sure some soup ones on there too!! GOOD LUCK!!

Lisa, welcome to the team - I'm glad you've joined. Both Progresso and Campbells offer lite soups that I enjoy. I add a 100 calorie English Muffin that I've toasted, some sort of fresh veggie - and I have a lovely lunch! Hope this helps.

Welcome to the team. You can also make wraps, take veggies and a low-cal dip. Fruit is always great. I eat a lot of salads as well.

Welcome! I get lots of "mileage" out of canned chicken broth. If it's not fat-free leave it in the fridge, and then when you open it take the congealed fat off the soup.

Make your own chicken noodle, chicken rice, chicken vegetable, or plain chicken soup. Cheap and pretty easy (tastes way better than canned IMHO).

Thank you leanance. I've actually been eating salads for the last 3-4 months. I have even been eating them for lunch and dinner a few days a week. I'm not so much bored of them just want to mix up a little bit more. But I will check out the recipes. :)

Hi Lisa, welcome to sp...I haven't really started eating soup yet...still sticking to salads myself. I don't really get bored with my food too easily. I guess I am lucky. Check out the recipes on this site, though. I am always finding good ones...good luck!
