For the longest time I didn't actually take a lunch break, just fixed up a meal as quickly as possible and ate it at my desk while cramming in work between bites.

Lately I take fifteen minutes or so to prepare a good meal and spend my lunch break on Spark! I do limit myself to using just the microwave and the toaster oven. The stove is strictly for dinner!

I really only have one other lunch meal plan in my arsenal right now...If I am pressed for time, I make a toasted turkey sandwich on Arnold's sandwich thins. My secret ingredient...banana peppers! They add just the right combination of sweet and crunch.

I work from home, so am excited to join the healthy lunch club since I have no coworkers to join me for lunch! I am a reformed microwave meal addict. Since they never kept me satisfied for long anyway and most have way too much sodium to be considered healthy regardless of calorie/fat content, I feel so much better eating healthier, fresher meals. Favorites: greek salad with whole wheat toast and herbed olive oil, mozzarella and tomato salad with a side of hummus and toasted pita, or egg white/turkey bacon flatout burritos with roasted veggies. But I do get bored pretty easily so will be needing new ideas weekly. Looking forward to borrowing some from new buddies.
