Salads loaded with lots of veggies and definitely some lean protein really work. Like you, I don't find sandwiches to be particularly filling. I usually grill a couple of extra chicken breasts or salmon on either Sunday or early in the week. I can then use them for salads during the week. Add in a fat-free yogurt and I'm usually good to go.

Hello, I'm a 39 yr old mom, wife, grandmom, Pastor's wife & also employed fulltime as an insurance sales rep so my time is limited in preparing lunches at home --sandwiches tend to me boring & don't keep me full for more than an hour. I like to be able to throw something together in a couple of months or grab something healthy at the grocer ---lots of unhealthy fast food options are surrounding me! I've been on spark since Dec 2007 but only got serious January of 2009. I have lost 16 lbs, with 26 more to lose & am looking for some easy & quick lunch ideas, would also need to be something that could be eaten at my desk as there are times that I don't get to stop for lunch. Any suggestions appreciated.
