But I figured I'd join this group anyways! I went GF about a year ago and then learned that I'm lactose intolerant a few months ago. With these two dietary restrictions combined, I'm pretty much on a paleo diet! The one thing that sets me apart is that I eat beans on a regular basis. It's my pain source of protein since I don't eat a lot of meat (I love meat, I do, I just don't cook it very often!). I'm also not big into using any sort of flour (almond flour, coconut flour, etc). I am going to switch to coconut oil, however, when I run out of olive oil. Most of the recipes I cook are from paleo websites since they tend to match what I can and can't eat and I hope that by joining this group, I can learn more about good recipes and whatnot (I LOVE to cook!!).
