You pronounce Paleo like the first one PAY-LEE-OH. Regarding Paleo bread. Here's a link I suggest you read about almonds. They do make a delicious flour too cook with, but you can overdo it. True Paleo is good proteins, good fats, non-starchy vegetables, some starchy vegetables, some fruit, and some nuts. My whole family has been eating Paleo/Primal for just about 6 months now and all of our considerable digestive/health issues have simply disappeared. For the first time in my life I feel like I can live without worrying about what mya be lurking around the corner! Eliminating wheat is the BEST ting we ever did. Honestly, I don't think you can go wrong!

SO right now I am just innondating myself with information about Paleo... First of all: how do you pronounce that? "PAY-lee-oh"? "puh-LAY-oh"?

The reason this interests me is because #1 it seems to be what the Crossfit community endorses, but also I am, again, having some digestive problems that I can't seem to resolve. It took me a couple of years to realize I am lactose intolerant and cannot tolerate dairy... which I guess is good if I am interested in Paleo. But now I am having some similar issues and am eliminating foods to see what I cannot tolerate- NOT having much success. I am wondering if it is wheat???

So I do not have a problem giving up dairy, but the wheat may be tough. I was looking into some Paleo bread by Julian bakery? Wondering if anybody has tried it?
