I have found this lifestyle does become easy - I spend less time thinking about food than previously, but it does take some adjustment, so give yourself time and space to do that.
And yes, our diets do impact in a number of health related areas.
One thing that worked well for me was to ensure I had a replacement for all the foods I was no longer eating. Replacement not re-creation. I didn't try to make bread out of all manner of things, I did start using spaghetti squash and cauliflower rice instead of pasta and rice.
Once you get into a rhythm it becomes quite natural and most people wouldn't think of eating any other way - plus most people feel way better - although that can take up to 30 days for some people, depending on where they are physically when staring down the path.
