I agree with you CINDYTW.
I'm glad to hear someone else is eating sweet potatoes / yams, too.
Unfortunately, many veggies simply don't agree with me. I'm reduced to string/snap beans (green or yellow), carrots and beets in moderation (our doctor frowns on the sugar! sheesh), and -unfortunately- winter squash. I can eat small amounts of summer squash, and mushrooms (yum!), but other than salad, most others are "out" for me. I've tried ... but the dietary "lesson" I get just isn't worth it. I feel so guilty eating the sweet potatoes ... they're so full of starch! and we know that goes straight to carbs, alas. But I have to eat SOME veggies! even if they're not on the class-A list!
I don't eat processed foods, nor grains, nor soy, and try to make sure any meats that have any appreciable fat are pastured. Along with whatever dairy and eggs. I do succumb to fruit that I probably overindulge with ... like frozen grapes. mmmm But overall, I do keep my carbs as close to 70-ish as I can. I fall off that intent sometimes, but it's my aim, at least.
It's good to know there's others out there not on the "real skinny" with the low-carb.
