emoticon Hi. I've got celiac disease and since diagnosis have read a lot of books (not to mention personal experience). Put plainly, gluten/grains suck, and it creates havoc for too many unknowing souls. I know this is true even if a person doesn't have a "gold standard" sm. bowel biopsy proven diagnosis of celiac dis-ease.

I've read Loren Cordain' book but that was three years ago. I am pretty much paleo, but I still eat dairy (plain yogurt daily w/probiotics), some cottage cheese (w/flax oils), once in a blue moon I'll make a whole-milk smoothie of some kind.

I don't eat many legumes (save for peanuts maybe if I'm out and starving and it's all I can find in a convenience store that's gf... when I get to that point I'd really rather dive into a bag of potato chips, because it's what I'm REALLY wanting, so peanuts don't raise my blood glucose and that's a win).

I'm trying to change my cholesterol. Maybe full-fat dairy has to go ... not sure. It's my comfort food and I'm hangin' on. Someday I might be blasting it like I do gluten grains! I'll keep reading.

I'm trying to keep my teams to a minimum, and trying to stay focused on priorities. It's nice to be with others who believe; I look forward to conversation and learning from your experiences.
