I leave meat out of most reciepes. I will do lots of beans in and on dishes. ie- mixed beans on a salad. To help with protein levels for working out, I mix my own frozen yogurt protein powder combos.

So, I recently realized there is a name for the type of diet I have followed most of my adult life, and I'm proud to call myself a Flexitarian. I don't do red meat, but eat chicken/fish once each per week maybe, and pork once or twice a month. My hubby is more of an Omnivore, but he's a real sport about eating my meat-free cooking. My kids are awesome eaters, and pretty much eat whatever we eat.

I find that often when I cook meat-free, I just leave the meat portion out of a recipe, but I'd like to become more mindful of making every meal protein-balanced, especially for my kids' sake. I'm thinking of challenging myself to eat Vegetarian for an entire month, just to see what I can learn about it.

I'm looking forward to learning how everyone here makes Vegetarian/Flexitarian work for them, tips and tricks for making the transition easier and new recipes to wow my husband and kiddos.
