Great tips! I think I'll take a swing at that salad idea this week. Sounds simple and quick enough (right up my alley!). However, I think I'll substitute that bacon with turkey bacon. Pork and I aren't really getting along that well these days (:

About two months ago, I had one horrible weekend of digestive issues that left an undeniable impression on me. I knew I hadn't been eating right, but this was a huge wake-up call. So went two weeks without meat - just veggies, fruits, and whole grains. I can't tell you what a difference it made. I was actually shocked at how well I was sleeping, how my quickly my sinus issues diminished, and how much better I felt.
Since that time, I've slowly integrated poultry and fish back into my diet. But I need some fresh ideas on how to do something besides grill and sauté everything. I'd love to be a new "Flexitarian" and get in on all the unique and tasty recipes that will help me enhance my meatless days of the week.
