I'm new to this group but not new to being a Flexitarian. I was a vegetarian starting when I was a kid. I just didn't like meat so I refused to eat it. This was allowed in my house just so long as I could come up with an alternative protein to replace it with. Seeing as how it was the 70's and being a vegetarian wasn't "trendy" I ended up eating a LOT of yogurt and beans....thankfully not at the same time.
By the time I met my husband I was a full blow vegetarian and he was well on his way. This was about the time I started to find my healthy and weight was being affected. Coincidentally I also read a book about Thomas Jefferson a rather famous flexitarian! He believed that a healthy diet was one where meat was more of a side dish rather than the main meal. This made SO much sense to me! So, I slowly began to re-incorporate meat, poultry, and fish into my diet. Now I only eat my meats as a side, but I also limit them to only a few times a week because I am still not a huge fan of meat. Don't think I ever will be.
I am very excited that my Spark friend BONOLICIOUS2 found this team. I can't wait to see what new recipes, protein alternatives, and meal ideas we can come up with!
