Welcome! I feel the same way.Just slowly eased into this.But i have to tell you,I defrosted some mussels ,shrimp and crab to make a seafood fra diavlo for dinner(which I used to like)and just the smell of it turned my stomach,so DH is getting it,I'm having a little gluten free pasta with just the tomatoe sauce on it!! Hi Stefani and welcome. I am Stephanie to, but just spell it different. I never heard of the documentary I'll have to try and find it. I am fairly new to this whole thing as well and am finding I feel better eating alot less meat and mostly fruits and veggies. Look forward to getting to know you:)Stephanie

My name is Stefani, 24, from Baltimore MD. I have been sparking for a little over a year now.
A few weeks ago, my boyfriend came home and declared he wanted to become a vegetarian. He watched a documentary "Forks Over Knives," which I later watched and found fascinating.
We have been slowly easing into vegetarianism but I love this concept of Flexitarianism. I would say it perfectly describes my eating habits these days. For example, we ate all veggie yesterday (Tofu veggie burritos, veggie burgers) but tonight we'll have organic chicken sausage from Trader Joe's. My BF also decided he won't eat meat if we're eating out - which has really changed our eating when choosing restaurants for dates and such.
I love the balance that these veggie days give me, while not completely restricting me. I feel like I am making better choices all around because of these veggie days. I'm learning a ton of new recipes and I'm feeling great!
Anyways, enough about me! I'm so glad I found this group though, you guys are awesome!
