I don't eat a lot of meat dishes anyway, last night in place of meat I had a serving of black beans for my protein. However, I am also trying to get away from processed foods as per doctor's orders I can't go over 1500 mg of sodium a day, so that leaves out Boca or Morningstar products as those products have tons of sodium in them. Last year the challenge started because for each person who pledged to do the challenge, a hungry child would be fed. I enjoyed the challenge so much I decided to try it again this year. I'm trying to find recipes as well to make my own vegetarian sausage, bacon and burgers. I love Portabello for the steaks.

Was looking for a team like this. I too am not a vegetarian but this October, for the 2nd year in a row I'm taking a month's challenge of vegetarian eating and living. I did this last year where I used to work and it actually helped me break through a plateau. Anyway, wanted to say hello. :)
