Very excited to have found this team. Can't wait to dive in and read the forum some. I have been contemplating less meat for a bit of time now. My goal is really more about variety - when I eat "well" I tend to eat the same things and although I get variety and nutrition there is just a lot I would like to "try". I thought that if I made the conscience decsion to change what I center my meals around it would foce me to try new things. I love veggies, but lack the ability to make appeasing veggies - just plain old steamed, boiled, roasted. I want to layer and try spice. I would love to try tofu and really enjoy all sorts of beans but never cook with them.
The plan is to slowly gravitate away from meat except for on weekends. I love all sorts of meats and want to have that flexibility. I will eat fish, eggs and milk products during the week as well. I'm very excited about this because I think it will force me to learn a lot. I have a friend that is going to be meatless during lent too so it will be good that one of my dinning out partners will be doing the same.
