Hi there, I just wanted to introduce myself. I've had a strong aversion to meat most of my life but ate it out of convenience. Fish was a totally different story. A couple months ago I started working with a nutrition coach and asked her to help me into a balanced vegatarian lifestyle that included fish on occasion. Come to find out that this type of diet is called Pescatarian! Holy crap - I feel so enlightened knowing there's an actual name for this way of eating.
So here I am :)
My challenge lately is finding fun things to still cook for myself. I've got a fridge full of healthy whole foods but still need to work on my planning meals... How do you find you can consistently plan your meals? I would like to try the week at a time with a day of batch cooking... but just haven't gotten there yet.
