I haven't logged into this team for a while, but welcome. I'm glad you have found a way of eating that is healing your body.
I've been a pescatarian for about three years now, and it's been wonderful. I too was pre-diabetic and had high cholesterol, but as a borderline anemic, I was afraid to give up meat. Very slowly, I dipped my toe into pescatarian eating.
I applaud your jump into a new way of eating. For me, the process was more gradual. I kept planning menus one week at a time, until I didn't want the hot dogs and hamburgers anymore. That took about three months, I guess.
I continued to tinker with my diet to meet other nutritional and health needs, so now, I now have a high protein, low cholesterol, low fat, and reduced sodium eating plan. I'm not perfect, but I eat lowfat dairy products and eggs in moderation. I do a lot of cooking at home and pack two meals and a snack daily. In exchange, my blood work and blood sugar are normal, except for the cholesterol. I'm losing weight, and my clothes fit again.
Enough about me, best of luck to you. Welcome to the team, and keep up the good work.
Change is the only constant in life.
