We have a lot in common - I'm also in an empty nest with a carnivore. I have finally gotten to the point that I cannot even prepare meat so he's quite happy to take care of that. Since he also likes seafood, he is happy to have that as often as I will prepare it and he has come to LOVE the vegetarian dishes I prepare. Good luck with your journey.
I was vegetarian for 5 years but I did not and never will have any support. I'm not from that kind of family. Also I have tons of food intolerances and my family wouldn't dream of eating what I do. But I love seafood so much and basically, our family has been a "Do It Yourself" family since the kids were teens. I was sad about not having family dinner but our schedules didn't allow it. Now DH & I are empty nesting. He eats his junk food. I eat my health food. I do occasionally eat meat if he prepares something for the two of us and I am not strict anymore, I've thought about returning to vegetarian status but refuse to give up my beloved seafood. Hence when I heard the title Pescatarian I was elated! *I* am a PESCATARIAN!! Suits me very well. LOL, I eat the crab blend nearly every meal. I love it. And salmon. Sushi. Just keep smelly Tuna away from me!
