Good luck with Beka!! We took in a cousin once when she was 8. Her mom's way of living was night and day different from ours. She had never set foot in school, her mom had different boyfriends in and out of the house, they all partied (alcohol and drugs). It was NOT a good situation. We had a lot of headaches with her during the year she lived with us. I am 10 years older. Mom would help her with English homework and I would help her with Math. We had to tag team her because she could be so mean and stubborn. You'll definitely need to pick your battles.
As far as hydration.....I'm a huge fan of Mio (and Wal-Mart's generic version). It's a calorie-free flavor that you can add to water. I also like crystal light. I drink a lot of iced tea sweetened with splenda and lemonade. All of those count as water and will help hydrate her. Maybe she can pick a few flavors she likes and go from there.
For the kids, I also buy Kool-Aid and have a gallon pitcher --- 2 packets per gallon. They enjoy making their own flavors, often mixing them. When I let them make their own, they're more likely to drink it.
