I just made this soup tonight. It was emoticon

2 cups chicken broth.
2 cups water.

A handful of chopped
Yellow Onions
Peppers
Green onions
Carrots
Celery
Corn
Chicken Tyson toasted diced is what I used

A Dash of

Pepper
Sea salt
Sage
Parsley

A cup of

Purée sweet potato

A 1/2 cup cooked of basmati oats and lentils by Pedon

& a handful of black beans

& let simmer. Enjoy emoticon

My favorite breakfast:

Steel cut oats...cook per directions, add in dried cherries while cooking. After finished, stir in a spoon of peanut butter, 1/2 packet of splenda. Peanut butter and jelly oatmeal.

Yum! Here's recipe for roasted veggies I made with dinner last night:
A hand full of carrots peeled and cut into bit size pieces
2 turnips peeled and cut into bite size pieces
1 leek white part chopped into small pieces
1 tblsp olive oil
Salt & pepper to taste
Mx together in a roasting pan
Baked 45 mins on 375F

This is a recipe from MIAMIA7 that she kindly shared with us!!!!

Garden Turkey Meatloaf

2 cups assorted vegetables, chopped-such as mushrooms, zucchini,red bell peppers, spinach, onions (we used carrots, broccoli, celery, green and red peppers, onions...whatever is in the fridge)
12 oz 99 % lean ground turkey
1/2 Cup whole wheat breadcrumbs (we used what we had in the cupboard)
1/4 Cup fat free evaporated milk
1/4tsp ground black pepper
2 Tbsp ketchup
1Tbsp fresh chives, rinsed, dried and chopped (or 1 tsp dried)
1 Tbsp fresh parsley, rinsed, dried and chopped (or 1 tsp dried)

For glaze
1 Tbsp ketchup
1 Tbsp honey
1 Tbsp Dijon mustard

Preheat oven...350 F
Steam or lightly saute the veggies (we don't do this..don't feel it's necessary)
Combine veggies and rest of the meatloaf ing. in a large bowl and mix. Spray loaf pan with cooking spray and spread meatloaf mixture evenly in the pan.

Combine ingredients for glaze and brush glaze on top of meatloaf.

Bake in oven for 45-50 minutes (to a minimum internal temp of 165 F)
Let stand for 5 minutes before cutting into eight even slices.

Calories-180 per serving (which is 2 slices)
Fat-2 g
Carb-17 h
Protein-25 g

Not sure if this counts as a recipes as it is so easy but it is a great way to get some veggies in your diet! If you've never tried eggplant, this is your chance. No need to soak it or peel it - how much simpler can it be?

Roast Winter Veg

1 large eggplant (skin on)
2 medium sweet potatoes (skin on)
2 Tb olive oil
1 clove garlic - crushed
salt and pepper

Chop veg into similar size chunks and put in a large zip lock bag. Add remaining ingredients, close the bag and shake until coated. This can be stored in the fridge for a day.

To cook, pre-heat your oven to 410° Dump the veg onto a pre-heated baking sheet and give it a stir. Veg should be in a single layer. Put in the oven on a high shelf for around 45 min. (longer if you like it well cooked!) giving it a stir once or twice.

I just posted this in sparkrecipes:
Persimmon Pomegranate fruit salad
1 Persimmon
1 Apple (I prefer Gala)
1 Pomegranate
a splash of lemon juice
a sprig or two of mint

peel and deseed the pomegranate (look for instructions on youtube), chop up the remaining fruits. Mix it all together. sprinkle with lemon juice and garnish with chopped mint.

Okonomiyaki

3 cups Napa cabbage, thinkly shredded
2 cups flour (I mix white and whole wheat equally)
1 Tbsp dried minced onion
1/2 tsp seasoning salt (I mix my own)
1/8 tsp garlic powder
3/4 tsp baking powder
2 eggs
1 1/2 cups milk
1 pkg bacon slices, cut in half (make shorter pieces, not skinnier ones)(we use turkey bacon)

Mix dry ingredients together.

Add in eggs and milk. Stir to mix thoroughly.

Stir in cabbage. Add a litte more milk if necessary for proper pancake batter consistency.

Pour appropriate amount into a hot pan sprayed with Pam or non-stick spray. Lay bacon slices on top of batter. Cover with a lid to help okonomiyaki cook through thoroughly. Each okonomiyaki should be good-sized, the size of a salad plate or small dinner plate.

When bottom is cooked to a golden brown, flip okonomiyaki over to cook the bacon side. Cook thoroughly.

Top with:
Tonkatsu or Pork Katsu sauce (we use Kikkoman brand)
Mayonnaise or Light Mayo
Pickled Ginger
Dried fish flakes
Dried seaweed flakes, or crumbled seaweed

One to one an a half okonomiyaki is enough for me for dinner, maybe 2 for my guys. I usually double this recipe in order to have leftovers. It also makes good breakfasts, and/or warms up well in the microwave.

Quick and yummy! salad idea:

Amounts to taste:

Peeled and cubed cucumber (thicker slices cut into quarters)
Large diced tomatoes (about the same size as the cucumbers)
Red onions (I dice these smaller, but not mince. Maybe 1/2 inch pieces)

Mix all these together, sprinkle with a little sea salt and fresh ground pepper if you want.

Pour a little light raspberry vinaigrette - I use Kraft Light Red Raspberry Viniagrette.

Allow it to chill and flavors to blend. Enjoy! I take this to pot lucks all the time and it's quite popular!

Buttermilk blueberry oatmeal pancakes(from Prevention)

1 1/4 cups quick cooking oats
1/2 c whole wheat flour
3T sugar
1/2 t baking powder
1/4 t baking soda
1/8 t salt
1 cup lowfat buttermilk
1 egg
1 egg white
1 T butter,melted
1 t grated fresh lemon peel
1 c fresh blueberries

In a bowl, combine the oats,flour,sugar,baking powder,soda,and salt.
In separate bowl, combine buttermilk,egg,egg white,butter and lemon peel. Pour the buttermilk mixture into the oat mixture,stirrring until just moistened. Gentrly fold in the blueberries with a rubber spatula. Refrigerate for 30 min.
Scoop 1/4 cup serving size and cook on griddle/pan.

*** I said in the October thread that there is no sugar-that was an accident. I missed it in this morning's batch and didn't even miss it in the finished product! That might be b/c I LOVE Log Cabin syrup on my pancakes....

This recipe, Tabooli, came from the back of a box of Hodgson mill bulgur wheat with soy.

1 1/2 c dry bulgur wheat with soy
1 1/2 c boiling water
1 bunch green onion
1 green pepper
1 cucumber
3 tomatoes,peeled and seeded
1 bunch parsley

Cover bulur wheat with hot water. Soak at least 2 hrs. This can be done in the frig. Drain excess water and squeeze reconstituted bulur. Chop all veggies very fine. Mix veggies with bulgur wheat. Refrigerate but it tastes a bit better if near room temp when eaten.
** I also used cooked quinoa in place of the bulgur wheat-very good,too.

The hummus and guacamole are from the Eat Clean cookbook:

Guacamole:
3 ripe avocados
juice of 1/2 fresh lime
1T chopped cilantro
1/2 red or purple onion,minced well
1 clove garlic passed thru a garlic press
Sea salt and fresh ground black pepper to taste

Cut avocados in half. Discard pit and coop flesh into bowl. Place all ingredients in medium bowl and mix til just bomvined. Don't overmix.


Eat Clean Hummus:
4 cloves garlic
2 c. canned chickpeas,rinsed and well drained
1t sea salt
1/3 c tahini
juice of 2 fresh lemons(I think this is too much)
1 T fresh olive oil

Place all ingredients in food processor. Pulse for a few minutes until well combined but still coarse. Adjust seasonings. Transfer to serving bowl and serve or cover with plastic wraps. Keeps well.

Hernandez Black Beans(from Casual Suppers cookbook)
Makes 4 servings

1 1/3 cups dried black beans
1t salt
1 med. onion,quartered
1/2 sweet green pepper,chopped
1/4 c olive oil
3 garlic cloves,crushed
1 small bay leaf
1/8 t dried oregano,crushed
4 c. cooked rice

1)Risne the beans in cool water. In a large bowl,cover beans with 4 cups water and soak overnight. for an alternate soaking method: risne the beans. In large saucepan, combine the beans and 4 c. water,bring to boile,reduce heat. simmer for 2 min. Remove drom heat and cover and let stnad for one hour.
2)using the same water(SPROUTS' note: I would rinse b/c it makes less gassy for those who are sensitive to beans),bring the beans to boiling in a large pot. Reduce the heat to medium-low.
3)Add the salt;voer and simmer about 45 min. or til the beans are tender. Test by pinching a bean. If it's soft and splits,it's done.
4)Add the onion,pepper,olive oil, garlic ,bay leaf and oregano to the cooked beans. Cover the pot and simmer about 20 min. or til the gravy is thick and creamy. 5)If there is too much liqid, remover the lid and cook about 10 min. more to reduce the liquid. Be careful not to burn. Serve with rice.
Tip: for more easily digestible beans:Drain and rinse the beans in step 2, and add 3 cups of fresh water.For more spice,add extra oregano and/or garlic.

This is DELICIOUS!!! Most of the family eats it right up and it's so inexpensive and simple!

Trish shared this with us and it sounds SO GOOD!!! She also said heat comes from the pepper...so use accordingly...

I had nabbed a recipe off the site "http://www.mealsmatter.org". It was pretty darned good!! I just have to figure out a way to get less salt, and less "heat" into it for the kidlets. I did use the lowest sodium soya sauce (making 1/3 of it water as well), along with dropping the sugar, but added some really good rice.

Tahitian Stir Fry
Total Preparation Time: 15 to 30 minutes Source: Dairy Council of California
Actual Cooking Time: less than 15 minutes Total Servings: 4
Ingredients
1 can (16 oz) Pineapple chunks
1/3 cup Soy sauce (reduced sodium)
1 tsp. Black pepper
2 tbsp. Cornstarch
2 tbsp. Sugar
1 tbsp. Vegetable oil
3 Boneless, skinless chicken breasts, cut into 1
inch pieces
2 cloves Garlic, finely chopped
1 1/2 cups Sliced zucchini 1 cup Chopped red or green pepper
Preparation
Drain pineapple, reserve juice.
Combine soy sauce, pineapple juice, black pepper, cornstarch, and sugar in small bowl and set aside.
Cook and stir chicken and garlic in hot oil, over medium-high heat in large, nonstick skillet until chicken is lightly
browned and no longer pink in center. Add zucchini and bell pepper to skillet, cook 3 minutes or until vegetables are
tender-crisp. Add soy mixture and cook until heated through and sauce is thickened. Stir in pineapple chunks.
Cook's Notes
Serve over rice. Use low sodium rice to reduce the salt content.

I think this started from a recipe I found on Spark, and I mutated & modified it to make it mine. Its my one & only 'famous' dish LOL.

Chicken Salsa
2 pounds chicken breasts
5-6 small cans of diced tomatoes - I used Hunts Fire Roasted w/ Garlic. If you want your salsa thicker, use less tomatoes.
3 packs of taco seasoning
Other spices to taste

Easiest way to make it:
Boil chicken, shred it by putting it thru a food processor. Mix chicken, tomatoes and taco seasoning in a slow cooker & simmer for 3-4 hrs. I add in garlic powder & a little red pepper. Goes great with tortilla chips, with or without a little nacho cheese. Or pour over rice/corn/beans and make a meal.

Or you can put - raw chicken/tomatoes/seasoning - into the slow cooker on high. After 2-3 hours, chop up the chicken and let it simmer for another 1-2 hours.

Easy, low cal & low fat. If you want to trim sodium, look for low sodium taco seasoning.

Wheat 'n Yogurt Bread

9 ounces water at 80F or 27C (heated)
2/3 cup plain nonfat yogurt
2 Tbsp butter or margarine
1.5 cups white flour
2.75 cups whole wheat flour
2 Tbsp Dry Skim Milk powder
2 Tbsp Brown Sugar
1.5 tsp salt
1.5 tsp Fermipan yeast (fast rise yeast)

Put wet ingredients into the bread maker. Add salt, then other dry ingredients, making sure yeast is last (you don't want the yeast and salt to touch.

Use the dough cycle. When it beeps, knead it into a loaf, and bake 35 minutes at 350 F.

You can use the Whole wheat bake cycle on the machine as well, but I hate it when the bread has those holes in it. I do it as a dough, and then bake it in the real oven.

It is soooo good.

For all those end-of-season tomatoes:

Tomatoes, basil, garlic, salt&pepper in the food processor. Cook and reduce. Stick in the freezer for winter pizza sauce, pasta sauce, soup...

Recipe for Recovery

Check out these simple meals that promote optimal recovery from exercise:

Cherry and Blackberry Smoothie

This complete meal in a blender provides carbohydrate, antioxidants and protein. The cherries and cherry juice have anti-inflammatory effects that have been shown to reduce muscle soreness following exercise.

1 1/3 cup frozen sweet dark cherries

2/3 cup frozen blackberries

1 cup tart cherry juice

1 cup low-fat plain Greek yogurt

1 tablespoon ground flaxseeds

Combine all ingredients in a blender container and puree until smooth.

Nutrition Data: 445 calories, 75 grams carbohydrate, 16 grams fiber, 25 grams protein, 9 grams fat and 75 mg sodium.

"Apple Chips. (from SELF Mag.)

Slices of-- Braeburn apples-- hold their shape well when baked until crunchy—perfect for a batch of munchable homemade chips. .

.Makes 4 cups .
INGREDIENTS.
2. tablespoons. sugar. .
1/8. teaspoon. cinnamon. .
4 .Braeburn apples, sliced crosswise into 1/8-inch-thick rounds. .

....PREPARATION.

Heat oven to 225 degrees.
Mix sugar and cinnamon in a bowl.
Arrange apple slices on 2 baking sheets lined with parchment paper; sprinkle with cinnamon sugar.

Bake 1 hour; *peel apples off parchment and return to paper.
Continue baking until golden and crisp, 30 minutes more.

Store in an airtight container up to 5 days. .

Super easy tomato sauce (it freezes well, so it's good for the overload of tomatoes.)

Saute garlic in some olive oil (I use about 4-5 cloves - I like garlic!).
Add chopped tomatoes (seeded) - about 2-4 pounds, or more, if the garden is overflowing.
Simmer for about 15-20 minutes - let it thicken a little.
Add some chopped basil (however basil-y you like it - I used about 9 leaves tonight).
Stir in sugar and salt to taste.
Stir.
Freeze/use.
Done.

We had these for dinner tonight. Quite simple and fast.

Turkey Burgers

Combine in a mixing bowl:
2 T. Onion Soup
1/2 t. Worstershire sauce
1/2 t. garlic powder
1/8 t. salt
dash pepper

mix in 1.25 pounds of ground turkey and bread crumbs (binder, use to your consistency). Divide and flatten into five quarter pound burgers.

Grill burgers.

Place on roll of choice with slice of low fat mozzarella cheese.

You can substitute as you wish for the Onion Soup (tonight I used: Gourmet Village Cheddar Onion dip mix). Finally top with any condiments you want (tonight I topped it with Sun Dried Tomato Tapenade).

Art Smith's Southern Oven Unfried Chicken
Recipe courtesy of Art Smith

Servings: Serves 8

Ingredients:

Art Smith's Southern Oven Unfried Chicken
1 cup nonfat Greek yogurt
8 drumsticks , skinless
4 chicken breasts , cut in half and skinless
1 Tbsp. Louisiana Hot Sauce
1 1/2 cup multigrain cereal flakes , crushed
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
2 tsp. black pepper
2 tsp. hot red pepper
1 tsp. paprika

Directions

Heat oven to 400 degrees.

In a bowl add yogurt, chicken pieces and hot sauce. Allow to soak. In bag, add crushed cereal flakes, and spices. Shake corn flakes and spices well. Add chicken pieces and shake well. Place on sheet pan and allow to sit uncovered in refrigerator for 30 minutes. Place on lightly oiled pan and into the oven.

Bake chicken pieces for 35–40 minutes.

Serve hot or room temperature.

We Need To Fuel Up for those long runs
This was from our Judi

Chocolate Zucchini Cake

0.5 cup Margarine (butter)
0.5 cup Vegetable Oil
1.75 cups white Sugar
2 Eggs
1 tsp Vanilla
0.5 cups sour Milk
2.5 cups Flour
0.25 cup Cocoa
0.5 tsp Baking powder
1 tsp Baking soda
0.5 tsp Cinnamon
0.5 tsp ground Cloves
2 cups fresh Zucchini, ground
0.5 cups chocolate chips

Cream the first three ingredients. Mix in eggs, sour milk, and vanilla. Stir in the dry ingredients, and then the zucchini. Place in a greased 9X13 pan. Sprinkle the chocolate chips on top. Bake at 350 for 45 minutes, or until it tests done.

This was was shared by Gigi..a while back....

Oreo Balls

They are so simple, but very fattening!!! BEWARE!!

1 package of oreos
1 pkg low fat cream cheese
1 pkg almond bark



Step #1

Put the whole package of cookies into a food processor and mix until all cookies are just crumbs. In a bowl add crumbs to softened cream cheese. Mix together well. ( I use my kitchen aid mixer)

Step 2

Line a cookie sheet with wax paper and roll dough into small balls, you want them to be bite size, line all the balls on the cookie sheet and chill for an hour. Meanwhile melt the chocolate in a double boiler, if you do not have one a pot with water on the bottom and a smaller pot with a handle on top, do not get water in your chocolate. ( add a little bit of crisco so the chocolate is a little runny) I then melt a little bit of milk choc to drizzle on the white just to make the look pretty!

Step 3

Dip chilled balls into melted chocolate, return to wax paper and let harden. Serve or store in an air tight container in the refrigerator.
These are the simplest, no bake, delicious dessert ever!!!

This is a great dish that my friends mom would make...hence the title...

Ginny's Tomato Recipe

6 medium tom. Sliced
5tbs. Butter
3/4c. chopped onion
3/4c. chopped green pepper
2cups(heavy cups) bread cubes (white &/or wheat)
1/2c. grated Romano
3/4tsp. Salt
1/8tsp. Pepper
1/4c. chopped basil
Italian seasoning
1 tbs.or less Brown sugar

*350 degree oven
*square glass pan

melt butter in 2 quart saucepan over med. Heat

add onion & gr. Pepper, saute' until tender

remove from heat & stir in bread cubes, 1/3c.
cheese, and spices

arrange 1/3 tom. in pan (layer)
sprinkle with 1/2 bread mixture
layer tom, bread mixture, tomato etc.

Bake 350 degrees for 45 min.
Sprinkle with rest of cheese (sprinkle with parsley for color)
