I was just diagnosed with prediabetes last week and need some accountability to get myself back on track with my healthy eating. I am a single mom raising 2 special needs boys while living with my parents that both have multiple medical issues themselves. I was eating healthy for a while but then I started eating out and not cooking like I used to and gained quite a bit of weight. I am attempting to get back into my habit of cooking for myself and my boys with all of our medical issues and allergies that we have.
